After my pumpkin protein breakfast cake totally went viral on social media, I knew I had to make a banana version! Banana is a very polarizing fruit, a lot of people love it, and others think it’s too overpowering. But trust me, this recipe is absolutely incredible!
It’s basically like a cross between a baked pancake and a banana bread, but with nearly 40 G of protein!

How to Make Banana Protein Breakfast Cake
Here are the simple steps, with photos, to make this recipe. Find full instructions in the recipe card.
Step one. Blend the banana, egg, egg whites, vanilla and maple syrup until smooth.
Step two. Add the protein powder, baking powder, oat flour and cinnamon. Blend until until a smooth batter forms.
Step three. Pour the batter into the prepared baking dish and add mini chocolate chips on top (if using).
Step four. Bake for 23-25 minutes or until the cake is set in the center. Remove from the oven and allow to cool before serving topped with flakey salt!
Michelle’s Tips and Tricks
- Blend, don’t mash or whisk. The problem with banana baked goods or banana pancakes is that they can get too chunky. Blending this batter is the key to making it a smooth cake, and don’t get whole banana chunks. I use an immersion blender, but you can also use a regular blender.
- Try to make muffins instead of a cake. If you don’t have the right-sized dish, you can try baking this in a muffin tin instead. Keep in mind it won’t rise like a muffin, and you’ll have to watch to adjust the cooking time.
Recipe FAQS
I know it looks big, but this recipe is made in a small dish, not a whole casserole dish! Still, this recipe is a large serving, but remember… serving size is subjective. You can easily split it up into two servings. I like to split it up with my son, and eat something else like bacon or sausage on the side!
The eggs are the main binder and a source of protein. I wouldn’t recommend making this same recipe with a flax egg.

- 1 ripe banana, mashed
- 2 egg whites
- 1 whole egg
- ¾ tsp vanilla extract
- 1 tsp maple syrup , see notes
- 1 scoop unflavored protein powder, I use a dairy free powder, but you can also use a whey protein powder if you tolerate dairy
- 2 tbsp gluten free oat flour
- 1 tsp grain free baking powder
- 1 tsp cinnamon
- 1-2 tsp dairy free mini chocolate chips, optional
- Flaky salt , to serve

- Preheat the oven to 350 F and grease a 7×5.25" baking dish well (I use this set).
- Using a tall measuring cup, add the banana, egg, egg whites, vanilla and maple syrup. Use an immersion blender to blend well until smooth. Alternatively, you can also use a blender.
- Add the protein powder, baking powder, oat flour and cinnamon. Blend until until a smooth batter forms.
- Pour the batter into the prepared baking dish and add mini chocolate chips on top (if using).
- Transfer to the oven. Bake for 23-25 minutes or until the cake is set in the center.
- Remove from the oven and allow to cool before serving topped with flaky salt!
