Why you’ll love this banana protein breakfast cake

After my pumpkin protein breakfast cake totally went viral on social media, I knew I had to make a banana version! Banana is a very polarizing fruit, a lot of people love it, and others think it’s too overpowering. But trust me, this recipe is absolutely incredible!

It’s basically like a cross between a baked pancake and a banana bread, but with nearly 40 G of protein!

Here’s why you’ll love it…

  • Gluten & dairy free! This recipe is gluten-free and dairy-free, making it the perfect allergen-friendly breakfast if you’re looking for more GF and DF options.
  • No cottage cheese. Cottage cheese is the protein it girl on the internet, and it’s so hard to find high-protein recipes without it. My blog is a cottage cheese-free zone, and this recipe is no different!
  • Perfect for meal prep. I love making this recipe ahead of time and saving it for the next day!

IngredientWhat it doesPotential swap
BananaThis is the main ingredient for the banana bread flavor.I wouldn’t recommend swapping!
Egg and Egg WhitesThese are the main binder and a source of protein. I wouldn’t recommend substituting!
Unflavored Protein PowderI like to use a dairy free, unflavored protein powder. You should be able to swap out other protein powders.
Oat FlourThis helps act as a binder. Be sure to use a gluten-free oat flour!I haven’t tried to swap this, but almond flour would be the next best option.
Grain-Free Baking PowderThis helps the cake rise. I like to use a grain-free baking powder! You can make a homemade baking powder.
Maple syrupThis adds a hint of sweetnessHoney
Dairy-Free Mini Chocolate ChipsI like to use dairy-free mini chocolate chips for an extra hint of sweetness! You can omit these if you prefer.

Michelle’s Tips and Tricks

  • Blend, don’t mash or whisk. The problem with banana baked goods or banana pancakes is that they can get too chunky. Blending this batter is the key to making it a smooth cake, and don’t get whole banana chunks. I use an immersion blender, but you can also use a regular blender.
  • Try to make muffins instead of a cake. If you don’t have the right-sized dish, you can try baking this in a muffin tin instead. Keep in mind it won’t rise like a muffin, and you’ll have to watch to adjust the cooking time.

Recipe FAQS

Is this really a single serving?

I know it looks big, but this recipe is made in a small dish, not a whole casserole dish! Still, this recipe is a large serving, but remember… serving size is subjective. You can easily split it up into two servings. I like to split it up with my son, and eat something else like bacon or sausage on the side!

Can you make this recipe egg free?

The eggs are the main binder and a source of protein. I wouldn’t recommend making this same recipe with a flax egg.
