Holiday breakfasts are one of those things that you just have to go all out for! There’s something so cozy about sitting down for a comforting breakfast after you’ve opened Christmas presents or you have family in town. I love making my AIP gingerbread cinnamon rolls or gluten-free French toast casserole, but this recipe combines the best of both worlds.

This gluten-free gingerbread French toast is about to become your favorite holiday breakfast! It’s easy to make and is bursting with Christmas-y flavors.

  • Gluten-free bread. I’ve tried a lot of different gluten-free breads, and the Breadsrsly XL sourdough loaf is by far my favorite. Use the code UNBOUNDWELLNESS for a discount!
  • Molasses. Molasses gives gingerbread that deep, rich flavor we all know and love. I prefer to use blackstrap molasses, but you can also use mild molasses for a lighter flavor.

Substitutions & Modifications

  • A bread of your choice. If you have another bread that you like to work with, that will still work for this recipe! Just keep in mind the texture and cook time may vary.
  • Dairy-free milk of choice. Almond milk is what I always use, but oat, coconut, or cashew milk will all work.

How to make Gluten-free Gingerbread French Toast

Step one. Slice the gluten-free bread slices in half to make 12 French toast bread sticks

Step two. Combine the eggs, almond milk, coconut sugar, molasses, cinnamon, ginger and vanilla extract. Then dip the French toast sticks into the mixture.

Step three. Cook each French toast stick into lightly crisp.

Step four. Top with pomegranate seeds and powdered sugar and enjoy!

Tips & Tricks

  • Add gingerbread cookies on top. If you’re making my AIP gingerbread cookies at any point in the holiday season, make some mini’s and put them in the freezer to save to add to the top of this recipe! It’s the cutest decoration.
  • Top with strawberries or raspberries for even more red color. The pomegranate arils are perfect for winter, but you can always add extra berries.

Can you make gingerbread french toast ahead of time or turn it into an overnight french toast?

This recipe is best fresh, but if you do make it ahead of time, store it in the fridge overnight without any toppings and quickly reheat it on the stove for a couple of minutes before adding toppings. 

What kind of molasses should you use for gingerbread french toast?

I prefer to use blackstrap molasses for that rich, deep flavor and color, but use mild molasses for a lighter flavor. 

Can you make this recipe egg-free?

I haven’t been able to make a good egg-free version of this recipe.

Description

This gluten-free gingerbread French toast is the perfect holiday breakfast! It’s made with gluten-free sourdough bread and is also dairy-free.


Ingredients

Units Scale
  • 6 slices of gluten-free bread (I use the breadsrsly XL loaves. Code UNBOUNDWELLNESS for a discount!)
  • 2 eggs
  • 1/2 cup almond milk
  • 2 tbsp coconut sugar
  • 2 tsp molasses
  • 1 tsp cinnamon
  • 3/4 tsp ginger powder
  • 1 tsp vanilla extract
  • 1 tbsp ghee (sub coconut oil or butter)

To serve

  • Maple syrup and/or powdered sugar
  • Pomegranate arils

Instructions

  1. Slice the gluten-free bread slices in half, making 12 French toast bread sticks. Set aside.
  2. Using a shallow bowl, combine the eggs, almond milk, coconut sugar, molasses, cinnamon, ginger and vanilla extract. Whisk well to combine. 
  3. Using a large pan set over medium-low heat, melt the ghee. 
  4. Working with 3-4 french toast sticks at a time, dip in the egg mixture, rotating to allow to soak entirely. Pick up the bread and tilt to allow any excess liquid to drip off.
  5. Transfer the bread to the preheated pan and cook for a couple of minutes on each side, until lightly crisp and golden brown. Transfer to a clean plate and repeat with all of the bread.
  6. Serve the French toast topped with powdered sugar and pomegranate seeds. 

Notes

This recipe is best fresh, but if you do make it ahead of time, store it in the fridge overnight without and toppings and quickly reheat on the stove for a couple of minutes before adding toppings.
