Gluten-Free French Toast Casserole

This gluten-free French Toast Casserole is a comforting baked breakfast made in one pan! This recipe is gluten-free and made without refined sugar.
What is French Toast Casserole?
French toast casserole is your answer to having a french toast to feed a crowd for way less work! It’s made with bread chopped into cubes that are then baked in the traditional French toast coating. No cooking individual pieces of French toast… all you have to do is toss it in the oven and you’re done.
This French toast casserole is made with gluten-free bread for a GF alternative to a comfort food classic!
The Ingredients for Gluten-Free French Toast Casserole

- Egg, almond milk, and vanilla extract. This binds the recipe together! I haven’t made this with other plant-based milks, but other options like oat milk should also work fine.
- Coconut sugar, ghee, and cinnamon. This makes the cinnamon-sugar glaze. You can also use coconut oil.
How to make Gluten-Free French Toast Casserole
- Coat the bread: Add the bread cubes to a large bowl. In a separate bowl, combine the eggs, almond milk, and vanilla extract, whisking well to combine. Pour the egg mixture over the bread cubes and toss with a rubber spatula, making sure that the bread cubes are thoroughly coated with the egg mixture. Pour the bread mixture into the baking dish.
- Add the glaze: Using a small bowl, combine the ghee, coconut sugar, and cinnamon. Drizzle the cinnamon-sugar mixture over the casserole.
- Bake & serve: Transfer the casserole to the preheated oven and bake for 45 minutes or until the bread is golden brown and the casserole is firm. Serve fresh with maple syrup if desired.
Can you make this the night ahead?
You can! You can easily make this the night before and store it in the fridge. Quickly reheat for a few minutes in the oven and top it off with maple syrup and you’re good to go!
I haven’t tried to prep everything the night ahead and bake the next morning, but let me know if you try it!
What can you serve this with?
Serve this alongside anything you would usually serve with French toast! Add some fruit on the side, bacon, or even an omelet depending on how hungry you are.
Can you make this paleo or AIP?

Ingredients
- 1 16 oz loaf gluten-free bread, chopped into 1″ cubes (I use this GF sourdough)
- 5 eggs
- 1 1/2 cups almond milk
- 1/2 tsp vanilla extract
- 2 tbsp ghee, melted
- 1 1/2 tbsp coconut sugar
- 1 tsp cinnamon
Instructions
- Preheat the oven to 375 F and grease and 8×8″ baking pan.
- Add the bread cubes to a large bowl. In a separate bowl, combine the eggs, almond milk and vanilla extract, whisking well to combine. Pour the egg mixture over the bread cubes and toss with a rubber spatula, making sure that the bread cubes are thoroughly coated with the egg mixture. Pour the bread mixture into the baking dish and set aside.
- Using a small bowl, combine the ghee, coconut sugar, and cinnamon. Drizzle the cinnamon-sugar mixture over the casserole.
- Transfer the casserole to the preheated oven and bake for 45 minutes or until the bread is golden brown and the casserole is firm.
- Serve fresh with maple syrup if desired.

Can we use vegan butter instead of the ghee?
I was just about to ask the same question 🙂
I haven’t ever really cooked with vegan butter but you probably can!
Made this for Christmas breakfast and it turned out great! Not too sweet and perfect liquid to bread ratio. The cinnamon sugar drizzle made a perfect sweet crunchy bit on top.
