Ingredients
For the chicken
- Salt & pepper
- 1 tsp onion powder
- 1 tsp garlic powder
- 3 tbsp dijon mustard
- 3 tbsp honey
- 2 tbsp avocado oil, divided
- 1 lb chicken breast, cubed
For the green beans
- 1 lb French green beans, trimmed
- Salt and pepper
- 2 tsp garlic powder
- 2 tbsp avocado oil
- Juice of half a lemon
To serve
- 2 cups jasmine rice, cooked
Instructions
- To prep the chicken, whisk the mustard, honey, seasonings, and 1 tbsp of avocado oil together in a medium bowl. Add the chicken and toss to coat. Set aside in the fridge for 25-30 min.
- While the chicken marinates, prep the green beans by preheating the oven to 400 F. Add the green beans to the baking sheet, season, and top with avocado oil and lemon juice. Toss well to coat. Bake in the preheated oven for 20 minutes (tossing halfway) or until the green beans and tender and lightly browned. Set aside.
- Remove the chicken from the fridge. Using a large, deep pan, heat the avocado oil over medium heat. Add the chicken in a single layer and allow to cook for 3-4 minutes on each side, being sure to rotate once browned to avoid burning the honey. Check the internal temperature for 165 F before removing from the heat.
- Serve the bowls with ½ cup of rice per bowl, and add the green beans, and the cooked honey mustard chicken!

Michelle’s Tips & Tricks
- Customize the marinade time. If you have more time and want to add some more flavor, you can marinate the chicken for up to two hours!
- Cut the chicken pieces evenly. This is key for having the chicken cook at the same time so you can avoid drying out your chicken.
- Watch the cook time. Honey can easily burn if you cook it for too long, so be sure to pull the chicken from the pan once it’s done.
- Use an instant-read thermometer for the chicken. I love using a thermometer so I can tell exactly when my chicken has reached 165 F!
Storage and Reheating Instructions
Store the chicken in the fridge for 3-4 days. To reheat, add the chicken to a pan and reheat on low for a few minutes!
