Apple Chicken Sausage and Harvest Vegetable Skillet

This easy sausage and vegetables dish features a delicious combination of savory sausage and flavorful vegetables plus sweetness from the apples! It’s an amazing fall meal, but really, it’s a great dinner option any day that you’re wanting something delicious with just one pan!

The Ingredients for the Apple Chicken Sausage and Harvest Vegetable Skillet

  • Apple Chicken Sausage. I like this one!
  • Avocado oil. You can also use other oils such as olive oil, if you prefer.
  • Yellow onion, sweet potato, and brussels sprouts. 
  • Salt, black pepper, and garlic powder. To season it!
  • Honeycrisp apple. 
  • Kale. 
  • Chicken broth and apple cider vinegar. 
  • Thyme leaves.
  • Parsley. To top it all off!

How to make Apple Chicken Sausage and Harvest Vegetable Skillet

  • Cook the sausage. Cook 2-3 minutes on each side or until browned.
  • Saute the vegetables. Add the onion, sweet potato, and brussels sprouts. Season with salt, pepper, and garlic powder, stirring to saute for 8-10 minutes or until the vegetables are tender and crisp.
  • Add the apple, kale, broth, apple cider vinegar, and thyme.  Allow to simmer for 3-4 minutes or until the broth has absorbed, the apple is soft, and the kale is wilted.
  • Stir in the sausage.  Stir to reheat.
  • Serve. Topped with parsley.

Can you make this recipe with a different kind of sausage?

The apple chicken sausage from Applegate is the best option to keep this recipe whole30, but if you have a local option you prefer that’s sugar free, that will certainly work for this recipe!

Can you make this recipe AIP?

Most sausage isn’t AIP-compliant. This is the bratwurst that I like to use for a nightshade-free sausage, but it’s not AIP-friendly. To make this recipe AIP, you can use ground pork or turkey instead of regular sausage.

  • 2 tbsp avocado oil
  • 12 oz chicken apple sausage, chopped
  • 1/2 yellow onion, diced
  • 2 cups sweet potato, diced
  • 2 cups brussels sprouts, halved
  • 3/4 tsp salt
  • 1/4 tsp black pepper
  • 2 tsp garlic powder
  • 1/2 cup Honeycrisp apple, peeled and diced
  • 1 cup kale, chopped
  • 1/3 cup chicken broth
  • 1 tsp apple cider vinegar
  • 2 tsp thyme leaves
  • 1 tbsp parsley, chopped

Instructions

  1. Using a large skillet, heat the oil over medium heat. Cook the sausage for 2-3 minutes on each side or until browned. Set aside.
  2. Using the same pan, add the onion, sweet potato, and brussels sprouts. Season with salt, pepper, and garlic powder, stirring to saute for 8-10 minutes or until the vegetables are tender and crisp.
  3. Add the apple, kale, broth, apple cider vinegar and thyme to the pan and stir to combine. Allow to simmer for 3-4 minutes or until the broth has absorbed, the apple is soft and the kale is wilted.
  4. Stir in the sausage and stir to reheat. Remove from the heat.
  5. Serve topped with parsley.
