This easy sausage and vegetables dish features a delicious combination of savory sausage and flavorful vegetables plus sweetness from the apples! It’s an amazing fall meal, but really, it’s a great dinner option any day that you want something delicious with just one pan!

  • Apple Chicken Sausage. I like this one! The apple chicken sausage from Applegate is a great option, but you can also use Aidells.
  • Avocado oil. You can also use other oils such as olive oil, if you prefer.
  • Yellow onion, sweet potato, and brussels sprouts. 
  • Salt, black pepper, and garlic powder. To season it!
  • Honeycrisp apple. 
  • Kale. 
  • Chicken broth and apple cider vinegar. 
  • Thyme leaves.
  • Parsley. To top it all off!

How to make Apple Chicken Sausage and Harvest Vegetable Skillet

  • Cook the sausage. Cook 2-3 minutes on each side or until browned.
  • Saute the vegetables. Add the onion, sweet potato, and brussels sprouts. Season with salt, pepper, and garlic powder, stirring to saute for 8-10 minutes or until the vegetables are tender and crisp.
  • Add the apple, kale, broth, apple cider vinegar, and thyme.  Allow to simmer for 3-4 minutes or until the broth has absorbed, the apple is soft, and the kale is wilted.
  • Stir in the sausage.  Stir to reheat & top with parsley!

  • Be sure that your chicken sausage is uniformly chopped. This ensures that the chicken sausage will cook evenly!
  • The uniform chopping also goes for the vegetables! Each vegetable should be chopped in a similar size to ensure that they cook evenly. For example, chop the sweet potato into similar-sized cubes, and the kale into similar-sized pieces!

Are Chicken Apple Sausages already cooked?

Yes, for the most part, they will be! Make sure to check the package, but we still definitely want to cook them to get that beautiful crisp.

How to tell your apple chicken sausages are cooked

You can always check with a meat thermometer to ensure that the sausages are cooked to 165 F, but you’ll also want to make sure they’re crisp for the best flavor and texture.

Most sausage isn’t AIP-compliant. This is the bratwurst that I like to use for a nightshade-free sausage, but it’s not AIP-friendly. To make this recipe AIP, you can use ground pork or turkey instead of regular sausage.

Apple chicken sausage is made with herbs, diced apples, and ground chicken. The casing depends on the brands, but it could be a pork casing or a pork-free casing!

Ingredients
 

  • 2 tbsp avocado oil
  • 12 oz chicken apple sausage, chopped
  • ½ yellow onion, diced
  • 2 cups sweet potato, diced
  • 1 ½ cups Brussels sprouts, halved
  • ¾ tsp salt
  • ¼ tsp black pepper
  • 2 tsp garlic powder
  • ½ cup Honeycrisp apple, peeled and diced
  • 1 cup kale, chopped
  • ¼ cup chicken broth
  • 1 tsp apple cider vinegar
  • 2 tsp thyme leaves
  • 1 tbsp parsley, chopped

Instructions
 

  • Using a large skillet, heat the oil over medium heat. Cook the sausage for 2-3 minutes on each side or until browned. Set aside.
  • Using the same pan, add the onion, sweet potato, and brussels sprouts. Season with salt, pepper, and garlic powder, stirring to saute for 8-10 minutes or until the vegetables are tender and crisp.
  • Add the apple, kale, broth, apple cider vinegar and thyme to the pan and stir to combine. Allow to simmer for 3-4 minutes or until the broth has absorbed, the apple is soft and the kale is wilted.
  • Stir in the sausage and stir to reheat. Remove from the heat.
  • Serve topped with parsley.
