These ground turkey and avocado taquitos are an easy and healthy alternative. They’re made with hidden vegetables, grain-free tortillas, are gluten-free, paleo, and can be made AIP.

We’ve been on a taquito-inspired recipe kick at my house! They’re so easy to make, and they can be surprisingly pretty healthy depending on how you make them. Though they’re traditionally made with cheese, you can easily make them to be dairy-free and even hide some vegetables. My toddler loves them, and they’re so simple to make.

These Ground Turkey & Avocado Taquitos are made with easy ground turkey, shredded zucchini, and avocado. No dairy, no grains, and adult and kid-approved!

The Ingredients for the Ground Turkey & Avocado Taquitos

  • Ground Turkey. You can also use ground chicken or even ground beef.
  • Grain-Free Tortillas. I like to use the Siete almond flour tortillas, but you can also use their burrito-sized tortillas (which are AIP!) and cut them in half!
  • Shredded Zucchini. Yay for hidden vegetables! The key to this is squeezing out any excess liquid with a cheesecloth or paper towel.
  • Avocados, Lime, Cilantro, Garlic Powder, Salt, and Pepper. These form the delicious avocado mixture.
  • Avocado Oil.
  • Yellow Onion and Garlic. 
  • Salt and Pepper
  • Avocado Oil.
  • Avocado Oil Spray. Spraying the taquitos with avocado oil helps it get crispy while it cooks!
  • Red Onion and Cilantro. For topping!

How to make Ground Turkey & Avocado Taquitos

  • Make the avocado mixture and set it aside.
  • Prepare the skillet and set it aside.

  • Roll the taquitos. Heat the tortillas for about 5-10 seconds to make them more pliable. Spoon 1 large spoonful of the avocado mixture, and about 2 spoonfuls of the turkey mixture. Roll into a tight taquito and transfer to the baking sheet. Repeat with all of the tortillas. Spray with avocado oil spray.

  • Bake. Bake the taquitos in the preheated oven for 15 minutes or until crisp.

Healthy is always subjective, but these definitely have healthy ingredients!

Can you make these in the air fryer?

To make in the air fryer cook at 370 for 6-8 minutes or until crisped to your liking.

Can you make these with a different protein?

You can also use ground chicken or even beef.

What do you serve on the side for dipping?

  • Guacamole. This is what I serve them with! It’s a lot of avocados, but I’m always down for more avocado.
  • Salsa
  • Sour cream (if tolerated)

For the avocado mixture

  • 2 medium avocados
  • Juice of half a lime
  • 1 tbsp cilantro, chopped
  • 1 tsp garlic powder
  • Salt and pepper to taste (omit pepper for AIP)

For the skillet and taquitos

  • 1 tbsp avocado oil
  • 1/2 yellow onion, diced
  • 2 cloves garlic, minced
  • 3/4 lb ground turkey
  • 3/4 tsp salt
  • 1/4 tsp black pepper (omit for AIP)
  • 1 cup zucchini, shredded (and excess water squeezed out)
  • 8 grain-free tortillas (I use Siete Almond flour tortillas, use cassava for AIP)
  • Avocado oil spray
  • 1/4 red onion, diced
  • 1 tbsp cilantro, chopped

Instructions

  • Preheat the oven to 400 F and line a baking sheet with parchment paper.
  • Make the avocado mixture by mashing the avocado and combining it with the lime juice, and seasonings. Set aside.
  • Prepare the skillet by heating the avocado oil over medium heat. Add the onion and garlic and saute for 3-4 minutes or until the onion is slightly translucent.
  • Add the ground turkey and zucchini to the skillet, and season. Crumble the turkey until fully cooked. Set aside.

  • Heat the tortillas for about 5-10 seconds to make them more pliable. Spoon 1 large spoonful of the avocado mixture, and about 2 spoonfuls of the turkey mixture. Roll into a tight taquito and transfer to the baking sheet. Repeat with all of the tortillas. Spray with avocado oil spray.

  • Bake the taquitos in the preheated oven for 15 minutes or until crisp (see notes for air fryer instructions)

  • Remove from the oven and serve topped with cilantro, red onion, and guacamole or salsa on the side to dip.
