These mango chicken tostadas are an easy flavorful dish made with grain-free tortillas, shredded chicken, mango, and a delicious dressing! They’re paleo and AIP-friendly.

Paleo Mango Chicken Tostadas

I personally always love a crunchy, flavorful tostada, no matter the time of year! But there is something about summertime and the addition of fresh fruit like mango that makes these even more appealing. Traditionally, tostadas are made with corn tortillas, but luckily you can easily make them grain-free!

These paleo tostadas are a little spin on the classic and made with chicken, avocados, mango, a crispy grain-free tortilla base and topped with a delicious cilantro lime dressing! They’re gluten-free, dairy-free, and AIP-friendly.

The Ingredients for Paleo Mango Chicken Tostadas

  • Almond flour tortillas. I use the Siete brand, see notes for alternatives of AIP/nut allergies.
  • Avocados. You’ll want the larger variety here.
  • Minced garlic.
  • Shredded chicken. I love to make this ahead of time in the Instant Pot or slow cooker.
  • Red onion.
  • Mango. You can buy this whole and chop it yourself or buy the frozen bagged version (just check for additives and thaw beforehand).
  • Fresh cilantro.
  • Cilantro lime dressing. You can use this dressing here for AIP, or the Primal Kitchen dressing.

How to make Paleo Mango Chicken Tostadas

  • Crisp the tortillas. Using a large pan, heat the avocado oil over medium heat. Add the tortillas one by one and cook for about 2 minutes on each side or until the tortilla starts to crisp. Repeat with all of the tortillas and set aside.

  • Prepare the avocado mash. Combine the avocado with salt, pepper (omit for AIP), lime juice, and minced garlic.Avocado in a bowl ready to be mashed
  • Assemble the tostadas & enjoy. Layer on the mashed avocado, then the shredded chicken, red onion, mango, and cilantro lime dressing. Serve fresh.

CAN YOU MAKE THESE TOSTADAS AHEAD OF TIME?

These are best fresh, but you can definitely prep all of the ingredients ahead of time and assemble them when you’re ready to enjoy! This really does come together quickly.

CAN YOU USE OTHER TYPES OF TORTILLAS?

You can! You can use other varieties of Siete brand tortillas, or other grain-free tortillas like homemade cassava tortillas for AIP. The trick is to just get them nice and crispy, so each of the different varieties of tortillas will vary a bit with cook times, but as long as you keep a close eye on it you can make it work.
