Why you’ll love these ginger fruit popsicles

Ice cream season is upon us, and my family can’t get enough. Ice cream is on the menu pretty much every day here in Dallas, TX. From my 2-ingredient mango ninja creami sorbet to my Ninja Creami protein ice cream, we don’t miss a beat.

Sometimes I want something even lighter, and that’s where these ginger fruit popsicles come in, for a lower-sugar treat with anti-inflammatory benefits! Here’s why you’ll love them…

  • Anti-inflammatory benefits!  Fresh ginger is packed with health benefits and is a great anti-inflammatory ingredient (source) that also just happens to taste amazing in this recipe!
  • Real fruit, no flavors or colors. This recipe uses real, whole fruit. No fruit colors, no funny business. Not only is it a more fiber-rich option, but it’s yummier.

  • Lemonade. To lower the sugar, you can use lemon water as well.
  • Ginger. You can adjust the amount of ginger depending on personal taste!
  • Kiwi, Peaches, and Strawberries.

How to make Ginger Fruit Popsicles

Here are the simple steps, with photos, to make this recipe. Find full instructions in the recipe card.

Step One. Whisk together the water, lemonade and grated ginger.

Step Two. Press 2-3 slices of fruit to the side of the wall of popsicle mold, then pour the liquid over the top.

Step Three. Add the popsicle sticks and covers onto the mold and freeze.

Step Four. Remove from mold and enjoy!

Michelle’s Tips & Tricks

  • Use fresh ginger! Fresh ginger is so much more flavorful than dried ginger or ginger paste. It’s so worth grabbing fresh ginger and grating it fresh for this recipe.
  • Adjust the sweetness with more or less lemonade. If you want a lower-sugar option, you can use lemon water instead! 
  • Adjust the ginger to taste. I like to use a larger thumb of ginger, but if you’re sharing with kids who don’t like the ginger flavor as much, you can use a smaller thumb.

Ginger Fruit Popsicles

Ingredients
 

  • 1 ½ cup lemonade, see notes
  • ½ cup water
  • 1 thumb ginger, peeled and grated, see notes
  • 1 kiwi, peeled and sliced
  • ½ peached, sliced
  • 1-2 strawberries, sliced

Instructions
 

  • Combine the water, lemonade and grated ginger. Whisk well to combine.
  • Using a popsicle mold, press 2-3 slices of fruit to the side of the wall of popsicle mold, varying the fruit for each mold.
  • Pour the liquid to the top of the popsicle mold, leaving just a small amount of space at the top.
  • Add the popsicle sticks and covers onto the mold and place in the freezer overnight, or until fully frozen.
  • Run the mold under warm water for a few seconds to loosen the popsicles before pulling out of the mold and enjoying!

Notes

A note about the lemonade: If you want a lower-sugar option, you can use lemon water instead! 
Adjusting the ginger to taste: I like to use a larger thumb of ginger, but if you’re sharing with kids who don’t like the ginger flavor as much, you can use a smaller thumb of ginger.
