Ramen bake recipes have become a staple in my house. Between my viral gluten free ramen bake and my bacon ranch ramen bake recipe, we keep ramen stocked! There’s really just so much you can do with a few bricks of ramen, and I decided that I should try French onion flavors with this concept. And surprise… It’s perfect.

The catch about French onion is that it can take a little while for the flavors to develop. You really want those creamy caramelized onions to be the star of the show! That’s why this recipe uses my favorite hack of adding coconut sugar to quickly caramelize the onions, which turns this into a quick and easy dish!

  • Low prep! The most prep you’ll do with this recipe is chopping the onions. Everything else is quite standard and easy!
  • Comfort food heaven with a twist. Of course, casseroles are classic comfort food, but this isn’t just a meat-and-potatoes comfort food. It marries different flavor profiles like French and Asian, and combines them into an easy and cozy casserole-style dish!
  • Gluten- and soy-free. This recipe uses gluten-free ramen and the sauce is thickened with arrowroot starch instead of flour!

  • Gluten free ramen. You can also use regular ramen if needed!
  • Ground beef. I love using ground beef because it’s quick, easy, and
  • Coconut aminos, beef broth, and red wine vinegar. This makes up the base of the cooking liquid for a savory, umami flavor.
  • Yellow onions. A key ingredient for french onion!
  • Coconut sugar. Coconut sugar is the secret to quickly caramelizing the onions to cut the time down in this recipe! I love using Big Tree Farms coconut sugar in both my sweet and savory recipes!
  • Gruyère cheese. This is optional, but classic! Either way, trust me that this recipe is just as yummy with or without the cheese.

Step by Step for a Gluten-Free French Onion Ramen Bake

Here are the simple steps, with photos, to make this recipe. Find full instructions in the recipe card.

Step one. Saute the onions then lightly salt and add the coconut sugar. Cook for another 5 minutes, until the onions soften but don’t fully caramelize. Set aside.

Step two. Whisk the sauce ingredients together.

Step one. Add the ramen bricks to the casserole dish along with the onions, ground beef and sauce. Cover and transfer to the preheated oven.

Step two. Bake for about 25 minutes. Carefully remove the cover and separate the ramen bricks with a fork. Toss and mix well.

Step one. Return to the oven and bake for another 10 minutes covered or until the noodles are soft. Serve as is topped with fresh thyme, or add the cheese and allow to melt for 5 minutes.

Michelle’s Tips & Tricks

  • Make sure your casserole dish is covered! I make a lot of pasta bake recipes, and this is a key step in any pasta bake. Covering ensures the liquid soaks into the noodles and cooks them properly, rather than just evaporating.
  • You may need more cooking time depending on your oven. Every oven runs a little differently. If your pasta isn’t cooking as quickly as the recipe says, add a little more time and more liquid if needed!
  • Mix the noodles well. When you separate the noodles partway through the recipe, make sure you stir them well into the sauce. This helps thicken the sauce and cook the noodles evenly.

  • 3 bricks gluten free ramen
  • 1 lb ground beef, cooked
  • 1 cup Gruyère, shredded (optional)
  • Fresh thyme

Instructions
 

  • Preheat the oven to 400 F and lightly grease a large casserole dish.
  • Heat the oil over medium-low heat in a pan. Add the onion and allow to cook on low for 5 minutes. Lightly salt and add the coconut sugar. Cook for another 5 minutes, until the onions soften but don’t fully caramelize. Set aside.
  • Combine the sauce ingredients and whisk well.
  • Add the ramen bricks to the casserole dish along with the onions, ground beef and sauce. Cover and transfer to the preheated oven.
  • Bake for about 25 minutes. Carefully remove the cover and separate the ramen bricks with a fork. Toss and mix well.
  • Return to the oven and bake for another 10 minutes covered or until the noodles are soft.
