This air fryer egg roll recipe is the perfect takeout dupe made healthier! It’s paleo, keto, low carb, vegan and AIP-friendly.

Air Fryer Egg Rolls

Who doesn’t love egg rolls? They’re crispy, easy to eat, and just all around the perfect appetizer (or main dish). Traditionally egg rolls are made with pork, cabbage, and other vegetables, wrapped in an egg wrapper, and fried for a crispy exterior. It seems like one of those dishes that would be labor-intensive to make at home, never mind making it more allergen-friendly and low carb… until this recipe!

These air fryer egg rolls are incredibly easy to make and are made with simple real food ingredients. They’re paleo, vegan, keto, low carb, and AIP.

The Ingredients for the Keto Air Fryer Egg Rolls

  • Coleslaw Mix: You can also use whole shredded cabbage, but I love a shortcut.
  • Baby Bok Choy
  • Shredded Carrots
  • Onion, Garlic & Ginger
  • Coconut Aminos: This is a soy sauce substitute used in the filling. You can also use it as a dipping sauce.
  • Nuco Coconut Wraps: These coconut wraps are perfect for making egg rolls! They’re keto, paleo, AIP, gluten-free and free of any weird added ingredients.

Equipment to make the egg rolls

  • Air Fryer. I use a Dash Compact Air Fryer and have space to fry two of these at a time, but any air fryer should likely work with this recipe!

How To Make Keto Air Fryer Egg Rolls

  • Cook the Vegetables: Heat the oil in a skillet and add the onion and garlic and saute for 4-5 minutes. Add the coleslaw mix, carrots, and bok choy and season with salt, pepper, and ginger. Stir continuously for 5-6 minutes or until the cabbage and bok choy have wilted and the carrots are soft. Pour in the coconut aminos and apple cider vinegar and stir well. Remove from the heat and set aside.

  • Roll the Egg Rolls: Add a fifth of the filling to the center of each coconut wrap, being careful not to overfill. Roll the wrap by folding up the bottom edge about a third of the way, then folding in the two corners, and rolling the egg roll tightly. Add a dab of water to the edge of the egg roll to seal. Repeat with each of the 5 coconut wraps.

  • Cook & Serve: Preheat the air fryer to 250 F, and prepare the egg rolls by very lightly brushing with avocado oil. Place the egg rolls in the air fryer and set to 3 minutes.

Can you add protein to these egg rolls?

You can add protein as long as it’s fully cooked! Here are some ideas for proteins to add to the egg rolls…

  • Cooked ground pork
  • Cooked ground chicken
  • Cooked ground beef

Why are there no eggs in this egg roll?

Egg rolls get their name from the egg wrapper, so traditional egg rolls actually don’t have eggs in them.

Can you make this recipe in the oven?

Technically, you can! Set your oven to 350 F and bake for 12-15 minutes.

Ingredients

  • 2 tbsp avocado oil (plus extra for brushing the egg rolls)
  • 1/2 onion, diced
  • 3 cloves garlic, minced
  • 3 cups coleslaw mix
  • 1/2 cup shredded carrots
  • 1 head baby bok choy leaves, chopped
  • 2 tbsp green onion
  • 1/2 tsp salt
  • 1/4 tsp black pepper (omit for AIP)
  • 1 tsp ground ginger
  • 1 tbsp coconut aminos
  • 1 tsp apple cider vinegar
  • 5 Nuco coconut wraps

Instructions

  1. Using a large skillet, heat the avocado oil over medium heat.
  2. Add the onion and garlic and saute for 4-5 minutes or until the onions are slightly translucent. Add the coleslaw mix, carrots, and bok choy and season with green onion, salt, pepper, and ginger. Stir continuously for 5-6 minutes or until the cabbage and bok choy have wilted and the carrots are soft. Pour in the coconut aminos and apple cider vinegar and stir well. Remove from the heat and set aside.
  3. Add a fifth of the filling to the center of each coconut wrap, being careful not to overfill. Roll the wrap by folding up the bottom edge about a third of the way, then folding in the two corners, and rolling the egg roll tightly. Add a dab of water to the edge of the egg roll to seal. Repeat with each of the 5 coconut wraps.
  4. Preheat the air fryer to 250 F, and prepare the egg rolls by very lightly brushing with avocado oil. Place the egg rolls in the air fryer and set to 3 minutes.
  5. Carefully remove from the air fryer with tongs. Allow cooling slightly beforeserving with coconut aminos for dipping.

Notes

To cook in the oven, set your oven to 350 F and bake for 12-15 minutes.
