These healthier Snickers bars are the perfect fun-sized treat! It’s made with date caramel and coated in dairy-free chocolate.

There’s a reason that Snickers bars are consistently one of the most popular Halloween candies! It was always my dad’s favorite growing up and one that I would save for him from my candy bucket. If you’ve never had a Snickers, they have a nougat layer, topped with caramel and peanuts, and are coated with chocolate. It’s the kind of thing that I never really even considered to make a copycat of, since it’s just so nostalgic and hard to mimic those flavors and textures. I decided to finally tackle it for my Halloween candy series, and I’m so glad that I did!

This version has an almond and coconut nougat layer, a date peanut butter caramel, and dairy-free chocolate coating, and still tastes like the real deal!

The Ingredients

  • Almond Flour, Coconut Flour, Almond Milk, Maple Syrup, and Coconut Oil. This combines to make the nougat layer, which is key to the authentic snickers flavor!
  • Dates, Maple Syrup, Peanut Butter, Vanilla Extract, Peanuts. This makes the caramel layer and traditionally has peanut butter and peanuts. However, you could sub another nut or seed butter depending on your dietary restrictions.
  • Dairy-Free Chocolate Chips, Coconut Oil, and Flakey Salt. This melts together to make the chocolate coating.

Substitutions

  • Swap the peanut butter for another nut or seed butter. Almond butter would be a great option; you can even use sun butter. Keep in mind that sun butter tends to be thinner, so you may have to use less maple syrup to balance the moisture.
  • Use almonds instead of peanuts. Blanched almonds would be a good alternative to peanuts.

How to make Healthier Snickers

  • Step One. Make the nougat layer.
  • Step Two. Add a small amount of the nougat mixture to each mold.
  • Step Three. Make the caramel layer.
  • Step Four. Add caramel layer to the nougat mold and freeze.
  • Step Five. Melt the chocolate and coconut oil together.
  • Step Six. Dip each snickers cube into the chocolate and top with flakey salt.
  • Step Seven. Allow to set in fridge and enjoy!

Tips & Tricks

  • Make sure the filling is totally frozen! Freezing the nougat and caramel layer is the best option for easily coating them in chocolate.
  • Set the chocolate in the fridge. You want to make sure that chocolate sets and the filling defrosts enough in the fridge so you don’t hurt your teeth!

Storage instructions

Store these in the fridge for 4-5 days, or freeze them for up to a month! If you do freeze them, just make sure that you set them in the fridge for a few hours before enjoying.

Ingredients

For the nougat

  • 1 cup almond flour
  • 5 tbsp coconut flour
  • 1/4 cup almond milk
  • 1/4 cup maple syrup
  • 2 tbsp coconut oil, melted

For the caramel layer

  • 1 cup dates, pitted
  • 2 tbsp maple syrup
  • 1/4 cup peanut butter (sub another nut or seed butter)
  • 1 tsp vanilla extract
  • 1/3 cup peanuts (sub almond or another nut, omit for nut free)

For the coating


Instructions

  1. To make the nougat layer, combine the almond flour and coconut flour. Whisk well to combine then add the almond milk, maple syrup, and coconut oil. Stir well to combine.
  2. Using a small square mold (I use this), add about 1 tbsp worth of the filling to each mold space. Set aside.
  3. To make the caramel layer, soak the dates in hot water for 10 minutes if hard. Strain and pat dry. Add the dates to a food processor and blend until a paste forms. Add the maple syrup, peanut butter, and vanilla and blend until caramel forms.
  4. Spoon the caramel over the nougat in the mold, pressing down with the back of a spoon. Add peanuts on top of the caramel and lightly push down. Transfer the mold to the freezer and allow to freeze solid for a few hours, until totally solid.
  5. Add the chocolate and coconut oil to a heat-safe glass bowl. Using a method of your choice (I prefer a double boiler method), melt the chocolate and coconut oil together until they are fully liquid. Allow to sit and cool for a few minutes.
  6. Prepare a plate lined with parchment paper. Carefully remove the snickers filling cubes from the mold. Working with one at a time, place on a fork and hover over the chocolate bowl. Use a spoon coat with chocolate on all sides. Place on the plate and top with flakey salt.
  7. Set in the fridge to allow the chocolate to set fully and the filling to soften before enjoying!
