These Veggie Pizza Roll-Ups are an easy and delicious dinner idea, quickly made in the air fryer! They’re made with ground beef, tons of veggies, and gluten-free tortillas.
I’m always looking for more easy dinners that my whole family will eat, and with summer coming up, the last thing that I want to do is heat up my whole kitchen with my oven and stove for hours. Enter the air fryer, which can do just about anything, including making these delicious veggie pizza roll-ups!
These pizza roll-ups are a veggie-packed option that kids will still love! They’re made in my Cosori TurboBlaze Air Fryer for quick cooking time, easy clean-up, and a perfectly crisp texture.

- They’re veggie-packed! I use zucchini, mushrooms, and broccoli in this recipe for a boost of nutrients.
- You can customize them. If you want to mix up the veggies with something like bell peppers, red onion, etc., you can most definitely do that. You can even switch up the meat with something like sausage, or add some extra sauce like alfredo for a cheesier flavor.
The ingredients for the veggie pizza roll up’s
- Ground beef. Even in a veggie-forward recipe, I like to add protein! I got for a lower-fat ground beef, but you can customize to your liking.
- Zucchini, spinach, mushroom and broccoli. You can also swap out the veggies to your liking.
- Marinara Sauce. Or you can use my nightshade-free marinara if you’re nightshade intolerant like me!
- Grain-free tortillas. I use Siete Almond Flour Tortillas.
- Cheese or dairy-free cheese. This is optional! I make them both with cheese and without, and they’re delicious either way.
The tools you’ll need for this recipe
- Air Fryer. I used my Cosori TurboBlaze Air Fryer, and it couldn’t be easier! I have a similar recipe that I cook in the oven, and it takes about twice as long as it does in the air fryer. - Tongs. You’ll definitely want tongs to rotate these pizza roll-ups so they cook evenly.
How to make Air Fryer Veggie Pizza Roll-Ups
- Step One. Prep the filling with the ground beef, veggies, and sauce.
- Step Two. Roll the filling into the grain-free tortillas to make the roll-ups.
- Step Three. Cook the roll-ups in the preheated air fryer, rotating halfway.
- Step Four. Serve fresh with dipping sauce, and enjoy!
Tips & Tricks
- Make sure you preheat your air fryer! This is a quick step, but I definitely recommend doing it.
- Customize the pizza roll-ups to your liking. Switch up the filling, go with our without cheese, use a different dipping sauce… the options are endless!
Storage and reheating instructions
You can store these in the fridge for 2-3 days and reheat them for about 2-3 minutes in the air fryer at 350 F.

Ingredients
For the filling
- 1/2 lb ground beef
- Salt and pepper to taste
- 2 tsp dried parsley
- 1 tsp dried basil
- 1/2 tsp dried oregano
- 1 tsp garlic powder
- 1 tsp onion powder
- 3/4 cup zucchini, diced
- 1/2 cup broccoli, finely chopped
- 1/2 cup baby bella mushrooms, diced
- 1 1/4 cup marinara sauce (plus extra to serve; sub this for nightshade free)
- 1/2 cup spinach, chopped
For the roll-ups
- 8 grain-free tortillas
- 1/3 cup shredded mozzarella (optional, omit for dairy free)
- Avocado oil spray
- 1 tbsp chopped parsley
Instructions
- Using a large, deep pan, cook the ground beef over medium heat and crumble. Lightly season with half of the seasonings.
- Once the beef is just browned, add the zucchini, mushrooms, and broccoli. Stir to saute for about 3-4 minutes or until the veggies just begin to soften and the broccoli turns bright green. Season with the remainder of the herbs.
- Pour in the sauce and stir to coat the beef and veggies. Reduce the heat to medium low and allow to simmer for 5 minutes. Add the spinach at the end, allowing it to wilt for a minute. Set aside and allow to cool slightly.
- Heat the tortillas for about 10 seconds to make them more pliable. Spoon 2 large spoonfuls of the ground beef mixture into a tortilla, along with a sprinkle of cheese (optional). Roll into a tight roll and transfer to the large plate. Repeat with all of the tortillas.
- Preheat the Cosori TurboBlaze Air Fryer (code UNBOUNDWELLNESS20 for 20% off) to 375 F. Once preheated, remove the basket and carefully place 4 tortilla wraps in the basket, evenly spaced. Spray with avocado spray. Cook at 375 F for 8 minutes, carefully rotating halfway through. Add 1-2 minutes of cook-time if a crispier tortilla is desired. Repeat with the other 4 roll ups.
- Serve fresh, topped with chopped parsley and a side of sauce for dipping!
I just made these since I had every ingredient except for mozzarella and broccoli but I just added a little extra zucchini and spinach and I used parmigiano Reggiano instead. Very tasty lunch.
