Paleo Chicken Bacon Ranch Wraps

Whenever I think about a classic American lunch, a lunch wrap is one of the first things that comes to mind! When I first went gluten-free, I just switched over to using corn tortillas. However, when I went grain-free, it got a bit more complicated. Wraps with anything other than lettuce weren’t really an option until Siete came out with  grain free burrito wraps!

Not only do these cassava-based burrito wraps make great burritos, but they make amazing wraps too! These chicken bacon ranch wraps are totally paleo, grain-free and can even be made to be AIP-friendly!

The Ingredients for the Chicken Bacon Ranch Wraps

  • Cooked chicken. You can either use shredded chicken or chicken chopped into strips.
  • Cooked bacon. Applegate bacon is my personal favorite brand.
  • Ranch dressing. You can use a homemade option or a complaint storebought option like Primal Kitchen if tolerated.
  • Romaine lettuce
  • Shredded carrots
  • Grape tomato (omit for AIP)
  • Siete Burrito Tortillas. Yup, these are both paleo and AIP!

How to Make the Paleo Chicken Bacon Ranch Wraps

  • Prep the burrito wrap over the stove.
  • Add about half of each of the ingredients to one tortilla, being careful not to overfill (see notes). Roll the wrap by folding up the bottom edge about a third of the way, then folding in the two corners, and rolling the wrap tightly. Repeat.
  • Carefully slice the wrap and serve fresh, or store in the fridge for about 1 day.

Can you make this with another dressing rather than ranch?

For sure! You can also use something like a green goddess dressing, or even just mashed avocado to keep it simple.

Where do you get the burritos wraps?

The burrito wraps I use are paleo and AIP! They’re Siete brand burrito sized tortillas, and I get them at Whole Foods but you can also get them in bulk online. Keep in mind that these are the only AIP siete product!

Can you make these ahead of time?

You can! They’re best fresh, but you can make them about a day ahead of time for lunch!

Can you freeze these?

I haven’t tried to freeze them, and I wouldn’t recommend freezing these. Lettuce doesn’t fair well in the freezer, so these aren’t the best for a freezer meal. Check out this blog post for freezer meal ideas!

Ingredients

  • 2 tbsp avocado oil
  • 2 Siete burrito sized tortillas 
  • 6 oz cooked chicken breast, chopped
  • 3 slices bacon, chopped
  • 3/4 cup romaine lettuce, chopped
  • 1/4 cup shredded carrots
  • 810 grape tomatoes, halved (omit for AIP, sub more carrots or lettuce)
  • 1/4 ranch dressing (use this for AIP and this for paleo)

Instructions

  1. Lightly heat the two burrito tortillas over 2 tbsp of avocado oil in skillet as instructed on the package to make them easier to fold. Set aside.
  2. Add about half of each of the ingredients to one tortilla, being careful not to overfill (see notes). Roll the wrap by folding up the bottom edge about a third of the way, then folding in the two corners, and rolling the wrap tightly. Repeat.
  3. Carefully slice the wrap and serve fresh, or store in the fridge for about 1 day.

Notes

As for overfilling the burrito, the exact measurements of each burrito filling will vary depending on the size of your vegetable cuts, how large your chicken pieces are, how tight you roll the burrito etc. Just keep eyeballing it, and remember you can start over!
