  • Dairy-Free Chocolate and Coconut Oil. These make the chocolate rim!
  • Almond Milk. You can  sub another dairy-free milk.
  • Strawberries and Vanilla Extract.
  • Ice Cream. You can use an AIP ice cream like this.

How to make the Chocolate Strawberry Mocktail

  • Prepare the rim of the glasses. Melt the chocolate and coconut oil together. Add the chocolate to a bowl or a small shallow plate and dip the top of the glasses in, turning to coat the rim. Transfer to the fridge to allow to set.

  • Make the strawberry milk and strain. Place a fine mesh strainer over a bowl and pour the strawberry milk over to strain out the strawberry seeds.

  • Blend and serve! Return the milk to the blender and add the coconut milk ice cream. Blend until smooth and serve in the glasses.

For the chocolate rim

  • 2 tbsp dairy-free chocolate
  • 1 tsp coconut oil

For the mocktail

  • 1 cup almond milk (sub another dairy-free milk)
  • 1 1/4 cup strawberries, chopped
  • 1/2 tsp vanilla extract
  • 2 scoops ice cream

Instructions

  1. Melt the chocolate and coconut oil together either over a double boiler or in the microwave in 20-second intervals, stirring until melted.
  2. Add the chocolate to a bowl or a small shallow plate and dip the top of the glasses in, turning to coat the rim. Transfer to the fridge to allow to set.
  3. To make the mocktail, blend the milk, vanilla, and strawberries together until totally liquid. Place a fine mesh strainer over a bowl and pour the strawberry milk over to strain out the strawberry seeds.
  4. Return the milk to the blender and add the coconut milk ice cream. Blend until smooth.
  5. Pour the mocktail into the chilled glasses and serve chilled.
