This Asian Inspired Chicken Noodle Soup is a delicious and nourishing one-pot meal made with ramen, chicken, mushrooms, and a savory, rich broth.

Asian Inspired Chicken Noodle Soup

With fall in full swing, it is time for some comfort food! Nothing is more comforting than a warm bowl of chicken noodle soup, full of nourishing ingredients!

This spin on chicken noodle soup is Asian inspired with carrots, mushrooms, and bok choy giving it some serious veggies. Plus the ginger, coconut aminos, and fish sauce give the soup great flavor! I used ramen noodles as well, but you can easily swap sweet potato glass noodles to keep it AIP.

The Ingredients in Asian Inspired Chicken Noodle Soup

  • Chicken Breast.
  • Salt and Black Pepper. You can omit pepper for AIP.
  • Fresh Ginger and Garlic.
  • Carrots, Mushrooms, and Bok Choy. To fill the soup with vegetables!
  • Chicken Broth and Avocado Oil.
  • Lime.
  • Coconut Aminos and Fish Sauce. To give the broth great flavor!
  • Ramen. I like these noodles or you can you can use sweet potato glass noodles for AIP.
  • Green onion and onion. 

How to make Asian Inspired Chicken Noodle Soup

  • Saute the chicken. Using a large, deep pot, heat the oil over medium heat. Add the chicken and lightly season with salt and pepper. Saute for 3-4 minutes on each side until cooked through to 165 F. Set aside.
  • Saute the vegetables. Using the same pot, saute the onion, garlic and ginger for 4-5 minutes or until the onion is lightly translucent. Add the carrots and mushroom and saute for another 3-4 minutes or until lightly tender. Add the bok choy and saute for another minute to lightly wilt.
  • Add the liquids and chicken. Pour in the broth, lime juice, coconut aminos, fish sauce, and add the chicken back in.
  • Simmer. Bring the pot to a boil and reduce to a simmer for 15 minutes.
  • Add the ramen. Add the ramen into the pot and use tongs to break it up. Stir until fully cooked. This will take only a few minutes.
  • Serve! Serve the soup topped with green onion, and salt and pepper to taste.

Can you make this recipe ahead of time?

You can, but keep in mind that the noodles will absorb some of the broth as it sits in the fridge, so it’s best fresh!

Can you make this recipe coconut-free?

It won’t have as much of that soy sauce flavor without the coconut aminos, but you can leave it out if needed.

Can you make this recipe without the ramen?

You can also use sweet potato glass noodles if you’re AIP!

  • 2 tbsp avocado oil
  • 1 lb chicken breast, diced
  • 1 tsp salt, divided
  • 1/4 tsp black pepper (omit for AIP)
  • 1/2 onion, diced
  • 1 thumb ginger, peeled and grated
  • 3 cloves garlic, minced
  • 1/2 cup carrots, sliced thin
  • 2 cups mushrooms, sliced thin
  • 1 head baby Bok Choy, chopped
  • 5 1/2 cups chicken broth
  • Juice of one lime
  • 2 tbsp coconut aminos
  • 1 tsp fish sauce
  • 2 bricks gluten-free ramen (see notes for AIP)
  • 2 tbsp green onion, chopped

Instructions
