Avocado Chimichurri
This avocado chimichurri is the easiest sauce to add tons of flavor to a variety of dishes! It’s made with cilantro, garlic, oregano, parsley, avocado, red wine vinegar, and avocado oil.
What is chimichurri made of?
Traditional chimichurri is a rich and flavorful herb sauce that’s made with parsley, oregano, olive oil, vinegar, and red pepper flakes.
This traditional recipe is incredibly delicious on its own, but this avocado forward version is a slight reimagination on the classic that features an extra layer of creaminess and more healthy fats!
Is chimichurri good for you?
“Healthy” is always subjective, but considering that chimichurri is made with lots of fresh herbs and healthy fats, I always feel incredibly nourished when I eat it!
The Ingredients for Avocado Chimichurri
- Avocado. Adds delicious creaminess and healthy fats to the traditional chimichurri flavors.
- Flat-Leaf Parsley and Fresh Cilantro. The fresh herbs bring so much great flavor to the sauce!
- Dried Oregano, Salt, and Clack Pepper. You can omit pepper for AIP.
- Garlic Cloves.
- Olive Oil.
- Lemon.
- Red Wine Vinegar.
How to make Avocado Chimichurri
- Add all of the ingredients to a high-speed blender and blend until fully combined.
- Season further to taste and serve fresh over steak or fish.

How do you keep chimichurri fresh in the fridge?
The best way to keep this recipe fresh longer is to keep it in an airtight container. If you notice any browning, add a bit of lemon or lime juice.
Can you freeze chimichurri?
Technically, yes you can! I suggest freezing it in silicone ice cube trays for proper portions so none goes to waste.

Ingredients
- 1 medium ripe avocado
- 1 cup flat-leaf parsley
- 1/3 cup fresh cilantro
- 1 tsp dried oregano
- 1/2 tsp salt
- 1/4 tsp black pepper (omit for AIP)
- 2 garlic cloves
- 1/3 cup olive oil
- Juice of half a lemon
- 2 tbsp red wine vinegar
Instructions
- Add all of the ingredients to a high-speed blender and blend until fully combined.
- Season further to taste with salt as desired, and add about 1-2 tbsp of more olive oil if a thinner sauce is desired.
- Store in an airtight container in the fridge for up to 3 days and serve over steak, beef or fish.
