This chicken Caesar salad pizza is the ultimate girl dinner! This version is gluten free, and dairy optional.

Chicken Caesar salad is a classic for a reason! I feel like most people go through a phase where we always order Caesar salad from restaurants, and going gluten and dairy free can definitely change all of that. I wanted to create a recipe that felt like you were eating out a fun restaurant with a simple to make at home recipe, and Chicken Caesar salad pizza was born! Salad on pizza was something I became familiar with working in a pizza place in college, and seriously… don’t knock it until you try it… you’ll love it!

The Ingredients for Chicken Caesar Salad Pizza

  • Coconut Yogurt, Lemon, Coconut Aminos, Salt, Garlic Powder, Anchovies, and Olive Oil. This makes the Caesar dressing. 
  • Gluten-Free Pizza Crust. I like to use this crust.
  • Pecorino Cheese. For dairy-free, either leave the cheese off or sub for a dairy-free cheese.
  • Romaine Lettuce.
  • Chicken. You can use chicken thighs or breast, just make sure it is fully cooked ahead of time.

How to Make this Chicken Caesar Salad Pizza

  • Step One. Make the Caesar dressing. 
  • Step Two. Bake the pizza crust with olive oil and cheese.
  • Step Three. Make the salad and top the pizza. Enjoy!

Tips & Tricks 

  • Make sure you cut the pizza before adding the salad. It just makes it way easier to slice! 
  • This is best fresh! Of course, salad always gets a little soggy if you make it ahead of time. If you want to save this for later, make the dressing and chicken separately and assemble once you’re ready to enjoy it all fresh.

Can you use a different pizza crust?

You definitely can use whatever pizza crust works for your dietary needs, just modify the cook time as needed.

Chicken Caeser Salad Pizza (Gluten Free)

Ingredients

For the dressing

  • 1/3 cup coconut yogurt (I use this)
  • Juice of one small lemon
  • 2 tsp coconut aminos
  • 1/4 tsp salt, pinch of salt
  • 1/2 tsp garlic powder
  • 12 anchovies (adjust to taste)
  • 2 1/2 tbsp olive oil

For the pizza

  • 1 gluten free pizza crust (I use this)
  • 1 tbsp olive oil
  • 3 tbsp pecorino cheese, divided (see notes)
  • 2 heads romaine lettuce, chopped
  • 1/2 lb cooked chicken, cubed

Instructions

  1. To make the dressing, combine the yogurt, lemon, coconut aminos, salt, pepper, garlic powder, and anchovies in a wide-mouth jar. Using an immersion blender, blend the dressing as you slowly stream in the olive oil. Blend until the dressing is creamy and fully emulsified. Set aside.
  2. Preheat the oven to 375 F and line a baking sheet with parchment paper. Brush the pizza crust with olive oil and top with 1 tbsp of cheese. Transfer to the preheated oven ad bake as directed (about 10 minutes or until golden brown). Remove from the oven and allow to cool slightly before slicing. 
  3. Make the salad by tossing together the lettuce, chicken, remaining cheese and dressing. Toss to coat the salad in the dressing. Add the salad on top of the pizza. Serve fresh and enjoy!

Notes

To make the recipe dairy free, simply leave out the cheese, or use a dairy free cheese of your choice.
