These mini zucchini pizza bites are a healthy twist on the classic replacing the crust with fresh zucchini for a fun way to feed your family extra veggies! Easily use any toppings of your choice to make these appealing to anyone in the family.
The Ingredients for Easy Mini Zucchini Pizza Bites
- Zucchini. I’d recommend choosing a thicker zucchini so you have more surface space for toppings.
- Marinara sauce. You can use nomato sauce for AIP.
- Shredded mozzarella cheese. Use this for AIP/dairy-free.
- Italian chomps stick. Sliced thin similarly to pepperoni.
- Parsley.
How to make Easy Mini Zucchini Pizza Bites
- Preheat the oven to 400 F and line a large baking sheet with parchment paper.
- Prepare the zucchini. Wash the zucchini well and slice off the ends. Slice the zucchini in 1/4″ sliced (you should have about 20-24 slices).
- Top the zucchini. Add the zucchini to the baking sheet and top each zucchini slice with a large spoonful of sauce. Cover the sauce with a sprinkle of mozzarella cheese. Finally, top with 2-3 slices of beef slices.
- Bake in the oven. Transfer to the oven and bake for 8-10 minutes or until the cheese is fully melted.
- Serve topped with chopped parsley.
