These French Onion Smashburger Tacos are the ultimate flavorful comfort meal! This version is gluten free, and can be modified to be dairy-free.

What is a Smashburger Taco?

The internet loves Smashburger tacos! A Smashburger is essentially what it sounds like… a burger that’s pressed down to be crispy and thin. A Smashburger taco is made by pressing the meat down on a tortilla to have the perfect crispy taco to fold over. I’ve shared recipes for a basic gluten-free smashburger taco, but you can really make them as creative as you want, like my gluten-free chicken parm smashburger taco!

Few flavors are quite as classic and comforting as French Onion! Of course, French Onion Soup is a staple, but I love reimagining it a bit with recipes like my French Onion Pot Roast. I decided it was time to marry two comfort food heavy hitters: French Onion and Smashburger tacos! Here’s why you’re going to love this…

Recipe Ingredients

  • Ground Beef. I recommend 80/20 ground beef because the higher fat ground beef is key to getting a crispy tortilla. 
  • Salt and Pepper. 
  • Tortillas. I use Siete Foods almond flour tortillas.
  • Gruyere. This really adds to the French onion flavor, but you could sub mozzarella or leave the cheese off.
  • Ghee. I love the flavor of using ghee to make this, but you could use avocado oil as well.

Michelle’s Tips & Tricks

  • Use a Blackstone or griddle to speed up the cook time. If you have access to a larger surface, such as a Blackstone, it will definitely speed up the process. An indoor griddle will also work!
  • Make sure you start cooking the smashburger meat side down first. This is critical for a smashburger taco!

How to Make French Onion Smashburger Tacos

Here are the simple steps, with photos, to make this recipe. Find full instructions in the recipe card.

Step one. Saute the yellow onions in ghee in the pan and add the coconut sugar and toss to coat until caramelized. Reduce the heat and add the balsamic vinegar and coconut aminos. Stir to combine and set the onions aside.

Step two. Combine the ground beef with the salt, pepper, garlic, onion powder, thyme, and coconut aminos.

Step three. Add roughly 2.5 oz of beef to each tortilla. Press the beef down with a fork and repeat with all 6 tortillas.

Step four. Add the taco meat side down onto a pan or grill and allow to cook for about 3 minutes before flipping. The meat should be visibly cooked and lightly crisp.

Step five. Add shredded cheese and cover to allow it to melt. Repeat the process with all of the tortillas. Serve topped with arugula and thyme and fold in half into a taco to serve!

Ingredients
 

For the onions

  • 2 tbsp ghee, sub avocado oil
  • 2 yellow onions, thinly sliced
  • Salt
  • 2 tsp coconut sugar, optional
  • 1 tbsp balsamic vinegar
  • 1 tbsp coconut aminos

For the burger

  • 1 lb ground beef
  • Salt and pepper
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp dried thyme
  • 1 tsp coconut aminos
  • 6 almond flour tortillas, sub another grain-free tortilla that’s similar
  • 6 oz gruyere, shredded (sub mozzarella)
  • 1 cup fresh arugula
  • 1 tsp fresh thyme leaves, for topping

Instructions
 

  • Using a large pan, set the heat to medium-low. Add the ghee. Once the ghee is melted, add the yellow onions to the pan and a pinch of salt. Stir the onion for about 15 minutes, allowing to cool slowly. To speed up the process, add the coconut sugar and toss to coat. Saute for about another 5 minutes or until the onions are softened and golden brown. Alternatively, you can omit the coconut sugar and keep caramelizing the onions for another 15 minutes or so until entirely soft and caramelized. Reduce the heat and add the balsamic vinegar and coconut aminos. Stir to combine and set the onions aside, covered to keep them warm!
  • Combine the ground beef with the salt, pepper, garlic, onion powder, thyme, and coconut aminos. Gently mix the ground beef, just enough to incorporate the seasonings.
  • Lay out the 6 tortillas on a clean surface and add roughly 2.5 oz of beef chicken to each tortilla. Press the chicken down with a fork in a thin even layer in the center of the tortilla. Repeat with all 6 tortillas.
  • Using a large pan set to medium heat that’s lightly greased (alternatively you can do this on a blackstone or a griddle) add the taco meat side down. Allow to cook for about 3 minutes before flipping. The meat should be visibly cooked and lightly crisp. Insert a meat thermometer to check for 165 F.
  • Add about 1 oz of shredded cheese. Reduce the heat to low and add a lid over the pan, covering for 2 minutes to allow the cheese to melt. Repeat the process with all of the tortillas.
  • Serve topped with arugula and thyme and fold in half into a taco to serve!
