Have you seen the viral smash burger tacos?! They’re made with a crispy smash burger, flour tortillas, melty cheese and are most often made with a big mac sauce. I’ve been wanting to try my own version of this recipe for months, but was nervous about making it without cheese. I decided to try it with a dairy free cheese sauce, and boy am I glad that I did! This version is just as delicious while being gluten and dairy free.

The Ingredients for Smash Burger Tacos

  • Ground Beef. I recommend 80/20 ground beef because the higher fat ground beef is key to getting a crispy tortilla. 
  • Salt and Pepper. 
  • Tortillas. I use Siete Foods almond flour tortillas.
  • Dairy Free Cheese Sauce. This dairy free cheese sauce is key to getting a melty dairy-free topping!
  • Shredded Lettuce, Pickled Onions and Pickles. Optional, but all for topping

How to Make the Smash Burger Tacos

  • Step One. Roll the ground beef into 6 balls.
  • Step Two. Place the balls on the griddle and place a tortilla on top of each ball.
  • Step Three. Smash down the tortilla until the burger is flat and allow to cook.
  • Step Four. Top the tacos and enjoy!

Tips & Tricks

  • Stick with a higher fat beef. This is key for getting a crispy tortilla as the fat is what really saturates and cooks the tortilla. 
  • Add toppings of your choice. I love shredded lettuce, pickled onions, and pickles, but you can add tons of other topping of your choice like cooked mushrooms, avocado, bacon, etc. 

The tools

  • Flattop griddle or griddle cooktop. I have a blackstone, and this is definitely the best cooktop to use for a recipe like this. However, you can also use something like an indoor griddle, or even a large pan if you’re patient to not over crowd the pan.
  • Smash tool. I highly recommend getting something like this if you plan to make smash burgers often as it’s a lot easier to fully smash the surface versus a spatula. You can also try to use other tools like a heavy pan to weight it down.

How to make Smash Burger Tacos without cheese

This was something that almost stopped me from trying to create this recipe. How can you make a melty, creamy burger taco without cheese? But trust me, dairy free cheese sauce is the perfect solution! The problem with a lot of storebought dairy-free cheese is that it doesn’t always melt well. The cheese sauce gives the melty vibe and cheesy flavor, and it actually saves the time and ingredients of making a burger sauce as this is already a sauce.

Ingredients

  • 1 lb 80/20 ground beef
  • Salt and pepper
  • 56 tortillas (I use siete foods almond flour tortillas)
  • 1/3 cup dairy free cheese sauce
  • Shredded lettuce, pickled onions & pickles for topping

Instructions

  1. Season the beef with salt and pepper and very gently mix. Roll into 5-6 balls and set aside. I find 5 is the perfect ratio for the almond flour tortillas, but you may need to make 6 balls if you’re using a smaller tortilla.
  2. Using a flat top griddle (I cooked this recipe on my outdoor blackstone) or a large pan, turn the heat up to high heat. 
  3. Place the balls evenly spaced of the griddle (or one a time in a pan) and place a tortilla on top of each ball.
  4. Use a smash tool (like this) to smash down the tortilla until the burger is flat. Cook for about 2 minutes and then press again. Cook for another 2-3 minutes or until the tortilla is crisped and the burger is cooked though.
  5. Use a spatula to carefully lift the burgers up. Flip to cook for another 1-2 minutes on the other side to crisp the tortilla. Lift again with a spatula and transfer to a clean plate. 
  6. Top with cheese sauce, shredded lettuce, pickled onion and pickles and serve fresh.
