What is Funfetti Cookie Pizza?
Funfetti Cookie pizza is exactly what it sounds like! It’s a dessert pizza made with a funfetti cake crust and topped with frosting and sprinkles. It’s the perfect way to satisfy that craving for funfetti cake in your oven at home when it’s not someone’s birthday!
Clearly, this funfetti cookie pizza is very much a dessert and not a healthy meal! But if you’re like me and like to still indulge but in a way that’s allergen-free, this is the perfect recipe for you! This funfetti cookie pizza is made to be totally gluten-free, dairy-free, and grain-free.
The Ingredients for Funfetti Cookie Pizza
For the Cookie Crust
- Tapioca starch
- Tigernut flour
- Gelatin
- Baking Soda
- Maple syrup
- Palm shortening
- Vanilla extract
- Sprinkles (I like to use these, or you can use these)
For the Frosting & Topping
- Palm shortening
- Coconut cream
- Light-colored honey
- Sprinkles
How To Make Gluten-Free Funetti Cookie Pizza
- Make cookie crust: Preheat the oven to 350 F and line a baking sheet with parchment paper lightly greased with coconut oil. Using a large mixing bowl, combine the dry ingredients. In a separate bowl, cream together the palm shortening and maple syrup. Add the mixture into the flour mixture and stir in the vanilla extract and sprinkles until the ingredients are combined and a dough is formed.
- Bake cookie crust: Add the cookie dough to the parchment paper and form it into an 8″ round crust. Bake in the preheated oven for 12-13 minutes or until the edges are lightly golden brown. Remove from the oven and allow to cool completely before handling.
- Make frosting & serve: Combine the ingredients of the frosting in a bowl and mix well. Use a spoon or rubber spatula to carefully frost the cooled cookie, and top with sprinkles. Use a pizza roller to very carefully slice the cookie and enjoy!
What sprinkles should you use?
I love these sprinkles! I bought them at Natural Grocers, but I’m sure other stores sell them. The colors are derived from curcumin, red cabbage, beet, and turmeric… all real colorings!
These sprinkles are another great option.
Can you make this recipe ahead of time? How do you store it?
You can! This recipe stores great in the fridge. I like to slice it first, and then store it in glass. I haven’t tried to freeze it, but it likely would freeze just fine.
Can you use a shortcut for the frosting?
Yes! I love to use Simple Mills frosting as a shortcut rather than making your own.
