Gluten-Free S’mores Pizza

This gluten-free s’ mores pizza is next level decadent! It’s a fun and delicious dessert that’s perfect for summertime snacking.
What is s’mores pizza?
S’mores pizza is exactly what it sounds like! It’s a dessert pizza made with a graham cracker crust and topped with chocolate and marshmallows. It’s the perfect way to satisfy that craving for smores in your oven at home when you don’t have access to a campfire.
Clearly, this s’mores pizza is very much a dessert and not a healthy meal! But if you’re like me and like to still indulge but in a way that’s allergen-free, this is the perfect recipe for you! This s’mores pizza is made to be totally gluten-free, dairy-free, paleo, and can be made AIP.
The Ingredients for this recipe
- Tigernut flour
- Tapioca starch
- Maple syrup
- Gelatin
- Palm shortening
- Dairy-free chocolate chips (I use enjoy life brand)
- Marshmallows (I love sweet apricity)
How to make this Gluten-Free s’mores Pizza
- Prep and bake the crust: Using a large mixing bowl, combine the dry ingredients. In a separate bowl, cream together the palm shortening and maple syrup. Add the mixture into the flour mixture and stir in the vanilla extract until the ingredients are combined and a dough is formed. Add the dough to the baking sheet and form it into an 8″ round crust that’s about 1/4″ thick. Bake in the preheated oven for 11 minutes.
- Add the chocolate: Remove from the oven and add the chocolate chips. Use a knife to carefully spread the chocolate over the crust as it melts. If the chocolate isn’t melting, transfer to the oven for 1-2 minutes to help it melt further.
- Add the marshmallows: Once the chocolate is melted, add the marshmallows. Transfer to the oven and allow to cook for 3-4 minutes, keeping a close eye to make sure they melt evenly and don’t burn.
- Serve: Remove from the oven and allow to cool for about 10 minutes. Use a pizza roller to carefully slice the crust and serve.
What chocolate should you use?
I like using enjoy life dairy-free mini chocolate chips because they melt so easily! However, you can try and use other dairy-free chocolates of your choice.
To make it AIP, use homemade carob chips.
Can you use other flours in the pizza base? What about something other than palm shortening?
I haven’t tried other options that I can guarantee will yield the same results for the sugar cookie pizza base in this recipe.
However, if you have another sugar cookie crust recipe that you tolerate and prefer, you can try to swap that out in this recipe and just follow the rest of the recipe as written!

For the cookie crust

- 1/2 tsp baking soda
- 1/4 cup maple syrup
- 1/3 cup palm shortening

- Preheat the oven to 350 F and line a baking sheet with parchment paper. Very lightly grease with coconut oil or other. Set aside.
- Using a large mixing bowl, combine the dry ingredients in the cookie.
- In a separate bowl, cream together the palm shortening and maple syrup. Add the mixture into the flour mixture and stir in the vanilla extract until the ingredients are combined and a dough is formed.
- Add the dough to the baking sheet and form it into an 8″ round crust that’s about 1/4″ thick.
- Bake in the preheated oven for 11 minutes or until the edges are lightly golden brown.
- Remove from the oven and add the chocolate chips. Use a knife to carefully spread the chocolate over the crust as it melts. If the chocolate isn’t melting, transfer to oven for 1-2 minutes to help it melt further.
- Once the chocolate is melted, add the marshmallows. Transfer to the oven and allow to cook for 3-4 minutes, keeping a close eye to make sure they melt evenly and don’t burn.
- Remove from the oven and allow to cool for about 10 minutes. Use a pizza roller to carefully slice the crust and serve. Top with an optional melted chocolate drizzle if desired!

If I’m not doing the AIP diet, would all-purpose gluten free flour or oat flour work as a tigernut replacement? Thanks.
I couldn’t say for sure as I have only tried it with tigernut flour. Oat flour might work similarly, but you’d have to experiment with it!
I love your recipes but I can’t do the ones with palm shortening in them as it doesn’t seem available in New Zealand. Is there a substitute that I can use? Huge thanks for the time you spend on the recipes and this blog, my older children now make your recipes and take them to school so that they don’t miss out on tasting what they cook for cooking class. It’s great to hear that their peers try them and say yum too teaching them healthy alternatives and making allergy friendly food less alien to school life too.
