Gluten Free Pizza Roll Ups {Paleo & AIP Options}
These gluten-free pizza roll ups are the easiest pizza roll-up you’ll ever make! This version can easily be made dairy-free, paleo, and AIP.
If you’re pressed for time for dinner, it doesn’t get any easier than these gluten-free pizza taquitos/pizza roll ups! They’re nothing like a traditional taquito or a traditional pizza of course. This is just a fun fusion that’s inspired by two different dishes. This recipe is easy to make, kid approved (my toddler ate 3), and is fun to eat!
The Ingredients for the Gluten-Free Pizza Roll Ups
- Ground beef. You can also use ground turkey or sausage if you prefer.
- Tomato sauce. Sub nomato sauce for AIP!
- Spinach.
- Grain-free Tortillas. I use Siete Almond flour tortillas, you can use these homemade cassava tortillas for AIP!
- Shredded mozzarella cheese. Sub this for a dairy-free option.
How to Make Gluten-Free Pizza Roll Ups
- Preheat the oven and line a large baking sheet with parchment paper.
- Brown and crumble the ground beef and season with salt and pepper.
- Pour in the tomato sauce, and spinach. Stir until the sauce is bubbling and the spinach is wilted. Set aside.
- Heat the tortillas for about 10-15 seconds to make them more pliable.
- Stuff and roll the tortillas. Spoon 2 large spoonfuls of the ground beef mixture into a tortilla along with cheese. Roll into a tight taquito and transfer to the baking sheet. Repeat with all of the tortillas.
- Bake the taquitos in the preheated oven for 20 minutes or until crisp.
- Remove from the oven and serve topped with parsley with tomato sauce on the side for dipping.
Can you use other tortillas?
You can use any tortillas for this recipe though the cook time may vary.
How do you make this recipe AIP compliant?
Use homemade cassava tortillas (just be aware that the cook time will vary, so keep a close eye on them), nomato sauce, and AIP mozzarella cheese! This version takes a bit more prep so I would recommend making 1-2 of these components beforehand to save yourself some time.
Can these be made ahead of time? How do you reheat them?
Yes! Simply reheat them in the oven for a few minutes.
Can you make them without cheese?
You can use dairy-free cheese or forgo the cheese and add more meat or other veggies.

Can these be frozen? If so how would you recommend to reheat?
I haven’t tried it, but I’d try to freeze it uncooked and then bake in the oven.
How do you heat up the tortillas? I use the same brand of tortillas but mine break up
I just carefully roll them, but you can also heat them for 10 seconds in the microwave
