Orange chicken is always a favorite of mine. It’s always a simple go-to when you need something delicious and high in protein. But on those super busy weeks when I just can’t be bothered to chop a chicken breast, I need a shortcut. I decided to try pairing ground chicken with an orange chicken sauce and serving it as a lettuce cup, and wow… I don’t know how I lived without this meal!

Why you’ll love orange chicken lettuce cups

  • Less prep than regular orange chicken. Regular orange chicken comes with chopping chicken breast, but this recipe uses ground chicken for even less prep!
  • Filling and high protein. This will fill you up with lots of protein!

What is coconut aminos and why are you always using it? 🤔

Coconut aminos is a soy sauce substitute without any soy or gluten. It tastes similar to soy sauce, but a touch more sweet and way less salty. If you’re not used to cooking with coconut aminos, taste as you go so you can add more or less salt to taste.

Can you use tamari instead of coconut aminos?

Tamari is gluten-free soy sauce that still has soy, but it also has much more sodium. You can use tamari but keep in mind you’ll have a saltier dish.

  • Orange Juice. Any orange juice will work!
  • Coconut Aminos. If you are adjusting to soy sauce or tamari, make sure to read the notes on adjusting the taste!
  • Garlic and Ginger.
  • Ground Chicken. You can also use ground turkey, or simply use a food processor to make your own ground chicken from boneless skinless chicken breasts or thighs
  • Butter Lettuce Leaves and Cooked Jasmine White Rice. For serving and making the lettuce cups!

Substitutions and modifications

  • Ground turkey. This recipe will work just as well with ground turkey.
  • Cauliflower rice. If you want to add more veggies and leave out the grains, you can use cauliflower rice instead of jasmine rice.
  • Romaine lettuce. Romaine lettuce leaves would also make great lettuce cups.
  • Tapioca starch. You can also thicken you sauce with tapioca starch.

Michelle’s Tips & Tricks

  • Don’t want a wrap? Serve it in a bowl! I ran out of butter lettuce once week when I prepped these, and I served it with the rice and a side of broccoli in a bowl, and it’s just as yummy.
  • Up the veggies with cauliflower rice. You can either mix your rice with cauliflower rice, or omit the rice altogether and just use cauliflower rice.

Ingredients
  

  • cup orange juice
  • ¼ cup coconut aminos
  • 2 tbsp chicken broth
  • 1 tbsp rice vinegar
  • 1 clove garlic
  • 1 thumb ginger
  • 2 tsp arrowroot starch
  • 2 tsp coconut sugar
  • salt and pepper
  • 1 lb ground chicken
  • 2 tbsp green onion, chopped

To serve

  • Butter lettuce leaves (about 14-16, varies depending on the size)
  • 1 cup Cooked jasmine white rice

Instructions
 

  • Using a mixing cup or small bowl, combine the orange juice, coconut aminos, chicken broth, rice vinegar, garlic, ginger, arrowroot, coconut sugar and a pinch of salt and pepper. Whisk well and set aside.
  • Place a large pan over medium heat on the stove. Add the ground chicken and light season with salt and pepper. Crumble to cook until cooked through.
  • Reduce the heat to medium-low and pour in the sauce. Allow to simmer for 2-3 minutes until thick, stirring to coat the chicken. Turn off the heat and add green onion.
  • Assemble the wraps by layer 2-3 leaves of butter lettuce (this will vary depending on the size of the leaves; you may be able to get away with just one) and add about ¼ cup of cooked rice. Top with about ¼-⅓ cup of orange chicken. You'll have enough for about 8 wraps, or 2 per serving, but this will vary depending on the size of your lettuce. Repeat and serve fresh!

    • Don’t want a wrap? Serve it in a bowl! If wraps aren’t your thing, serve the chicken in a bowl with sides like rice and broccoli.
