What is a rutabaga?

Rutabagas are a delicious root vegetable that is unknown to many people! It’s actually a hybrid of a cabbage and a turnip, and it is a secret rockstar starchy vegetable that is completely AIP compliant, paleo, and Whole30. If you haven’t tried a rutabaga yet… this is your chance to get in on the rutabaga train!

This oven-roasted rutabaga is a ridiculously easy and delicious way to enjoy this vegetable! It is made with nourishing, flavorful ingredients and roasted in the oven. This is a perfect side dish for a busy weeknight dinner, and is AIP, Paleo, Whole30 and vegan.

 

The Ingredients To Make Oven-Roasted Rutabaga

  • Rutabagas: The star of the dish!
  • Avocado oil: You can also use other oils such as olive oil, if you prefer.
  • Apple cider vinegar
  • Sprigs of thyme leaves
  • Garlic powder, Onion powder, Dried parsley
  • Salt & Black Pepper: Omit pepper for AIP.

 

How To Make Oven-Roasted Rutabaga

  • Preheat oven: Preheat the oven to 400 F and line a large baking sheet with parchment paper.
  • Prepare rutabaga: Add the rutabaga to the baking sheet and top with avocado oil and seasonings. Toss to coat well.
  • Roast & serve: Transfer to the preheated oven and roast for 40-45 minutes or until golden brown, tossing once or twice while in the oven to evenly roast. Serve fresh or store for 2-3 days in the fridge.

Rutabaga has a similar flavor to a turnip it’s a bit starchy tasting and a mix between sweet, savory, and a little bitter.

Oven Roasted Rutabaga

  • 2 medium rutabagas, peeled and chopped into cubes (about 4 cups)
  • 2 tbsp avocado oil
  • 1 tsp apple cider vinegar
  • 3 sprigs of thyme leaves
  • 2 tsp garlic powder
  • 2 tsp onion powder
  • 1 tbsp dried parsley
  • ½ tsp salt
  • ¼ tsp black pepper, omit for AIP

Instructions
