Non-alcoholic Paleo Eggnog

What is paleo & vegan eggnog?
Eggnog is such a holiday classic! My husband starts drinking it in November every year, and I made it from scratch the first time for him this year. Eggnog is made with milk, cream, vanilla, nutmeg, cinnamon, sugar, tempered egg yolks, and often alcohol like brandy.
Paleo and vegan eggnog is not only non-alcoholic, but it’s dairy-free and egg-free! So what’s left? You can still get tons of nostalgic flavor with this alternative!!
How to make non-alcoholic vegan & paleo egg nog
- Add all of the ingredients to a medium-sized pot and whisk well until thoroughly combined.
- Set on the stove top over medium heat and allow to heat for 5-8 minutes on a low simmer, stirring often to allow the flavors to combine.
- Allow to cool slightly before pouring the eggnog into a metal bowl nested inside a larger bowl filled with ice to form an ice bath. Allow to sit for 20-30 minutes to chill.
- Serve fresh topped with additional cinnamon if desired.
How long will this eggnog keep in the fridge?
If you store it in glass, it should last in the fridge for 2-3 days without spoiling. You may need to run it through a blender if the cream hardens!
Could you add alcohol if you wanted to?
If you want, sure! I haven’t tried it with alcohol (as I’m pregnant) but a bit of brandy is probably your best bet.
Can you make this eggnog coconut free?
I haven’t tried alternatives to coconut in this recipe, but you can likely make amazing eggnog with cashew milk and cashew cream if you tolerate that.

Coconut milk and coconut cream
I use canned coconut milk for this egg nog as the dairy base, and coconut cream to make it nice and creamy.
Cinnamon, nutmeg, and vanilla
These flavors really turn this coconut drink into eggnog! You can also use mace instead of nutmeg for AIP.
Maple syrup
Maple syrup adds a fall flavor along with lots of natural sweetness!

Does this really only make 2 servings?
What is the best way to get 1cup coconut cream? Do you refrigerate a can and pour off the liquid?
Also, what is the point to the ice bath? Is there a benefit over simple refrigeration?
