Step one. Add 1/4 cup of water to the stand mixer then sprinkle over 1 tbsp of gelatin. Set aside to allow to harden while combining honey and water on the stove until it reaches 240 F before adding to the stand mixer and whipping. Michelle’s Tips & Tricks
- Use good-quality peach jam. This is what makes the recipe really shine! I use this Bonne Maman peach jam, but you can easily use a jam that you make at home or buy at a farmers’ market!
- Adjust the jam to taste. I like to add 1/4 cup of jam, but you can add more or less to taste.
- Whip until thick and glossy. You’ll know that your marshmallow fluff is ready when it has a glossy shine and is thick and no longer liquid.
“My marshmallow fluff isn’t getting thick.”
Depending on the mixer you’re using, you may have trouble getting your fluff to get thick. If it’s taking longer than 8-10 minutes of whipping to thicken, transfer the bowl of your stand mixer to the fridge for 10 minutes to allow it to set further before adding the peach jam!

- 1 cup honey
- 1 tsp vanilla extract
- ¼ cup peach jam
Instructions
- Using the bowl of a stand mixer (see notes for hand mixer method) add 1/4 cup of water to the base, and then sprinkle over 1 tbsp of gelatin. Set aside to allow to harden. Add the whisk attachment to the stand mixer for later.

- Add the vanilla extract and whip for another 2-3 minutes or so, or until the mixture is very thick like marshmallow fluff!
- Remove the stand mixer bowl from the base of the stand mixer and add the peach jam. Fold it in with a silicone spatula until well incorporated.
