What is pickled ginger?

Pickled ginger is a delicious condiment made from thinly sliced ginger that’s pickled with rice vinegar and sugar. It’s perfect for eating along with sushi and is fairly straightforward to make at home.

However, if you don’t eat rice vinegar or refined sugar, pickled ginger that you tolerate may be hard to come by. That’s why I’m sharing this recipe that’s made with apple cider vinegar and coconut sugar!

The Ingredients for Quick Pickled Ginger

  • Ginger. Ginger is a healthy, anti-inflammatory ingredient!
  • Water.
  • Apple Cider Vinegar.
  • Coconut Sugar. Many pickled gingers you’d find on the shelves have a lot of extra sugar, so I use coconut sugar to keep this refined sugar-free.
  • Salt.

How to make Pickled Ginger

  • Wash and peel the ginger.

  • Add the ginger to a clean glass jar and set it aside.

  • Combine the water, apple cider vinegar, coconut sugar, and salt in a small saucepan. Place over medium-high heat on the stove, whisking until the sugar dissolves and the liquid boils.

  • Pour the hot liquid over the ginger and allow the jar to cool before covering. Swirl and lightly shake the jar to combine and ensure that the ginger is fully submerged.

  • Store in the fridge and serve chilled.

Ingredients

  • 1/2 cup water
  • 1/3 cup apple cider vinegar
  • 3 tbsp coconut sugar
  • 1/4 tsp salt

Instructions

  1. Wash the ginger well and use a peeler to remove the peel. Continue to peel the ginger into large pieces.
  2. Add the ginger to a clean glass jar and set it aside.
  3. Combine the water, apple cider vinegar, coconut sugar, and salt in a small saucepan. Place over medium-high heat on the stove, whisking until the sugar dissolves and the liquid boils.
  4. Pour the hot liquid over the ginger and allow the jar to cool before covering. Swirl and lightly shake the jar to combine and ensure that the ginger is fully submerged.
  5. Store in the fridge overnight before enjoying. Serve chilled. The ginger will be spicy and lightly tangy.
