We all have those evenings when we have a sweet tooth but don’t want to bake an entire batch of cookies. Especially with fall baking season coming up! What if you could just make one big cookie and totally satisfy your craving? This pumpkin cookie is the perfect single-serve cookie! It’s really easy to make and is packed with fall flavors.

The Ingredients for Single Serve Pumpkin Chocolate Chip Cookie

  • Almond Flour. I haven’t successfully made this cookie nut-free.
  • Arrowroot Starch. You can also use tapioca starch.
  • Flax Meal. This helps to bind the cookie a bit.
  • Baking Powder. I like this one!
  • Pumpkin Puree and Pumpkin Pie Spice. For that signature pumpkin flavor!
  • Maple Syrup.
  • Dairy-Free Chocolate Chips. I like the Enjoy Life brand.

How to make Single-Serve Pumpkin Cookie

  • Step 1. Combine the dough. Combine the almond flour, arrowroot, ground flaxseed, pumpkin pie spice, and baking powder in a medium-sized mixing bowl. Fold in the maple syrup, pumpkin puree, and chocolate chips and stir until a dough forms.
  • Step 2. Form the cookie. Add the dough to the baking sheet and form into a cookie.

  • Step 3. Bake and cool! Add a pinch of flakey sea salt.

CAN YOU EAT THE RAW COOKIE DOUGH?

It’s egg-free, so technically you can. However, I recommend opting for a recipe like this edible cookie dough since this recipe is developed specifically to be edible!

Yes, this cookie needs to be refrigerated. You can keep it in the fridge for 3-5 days, or freeze it for up to a month.

Can you make this cookie nut-free?

I have not made this cookie without the almond flour, but the next closest thing would be tigernut flour.

Ingredients

  • 1/3 cup almond flour
  • 2 tsp arrowroot starch
  • 1/2 tsp ground flaxseed
  • 1/4 tsp pumpkin pie spice
  • 1/8 tsp baking powder (I like this one)
  • 1 tbsp pumpkin puree
  • 1 tbsp maple syrup
  • 1 tbsp dairy-free chocolate chips (I like the enjoy life brand)
  • Pinch of flakey sea salt

Instructions

  1. Preheat the oven to 350 F and line a small baking sheet with lightly greased parchment paper.
  2. Combine the almond flour, arrowroot, ground flaxseed, pumpkin pie spice, and baking powder in a medium-sized mixing bowl. Fold in the maple syrup, pumpkin puree, and chocolate chips and stir until a dough forms.
  3. Add the dough to the baking sheet. Slightly flatten the cookie and form it into a large, round cookie. Add some extra chocolate chips on top if desired.
  4. Bake in the preheated oven for 10 minutes or until baked through. Allow to cool slightly before carefully transferring to a cooling rack to completely cool.
  5. Serve topped with a pinch of flakey sea salt.

  1. I’m on strict AIP right now, so I swapped the almond flour for tiger nut instead. I also swapped gelatin powder for the flax, and added a teensy but if vanilla extract. Lastly, I left out the chocolate chips. And it was still delicious! Your recipes, Michelle, have been a huge blessing from the Lord during my strict AIP phases and trying to find what foods work for my body. Thank you!
