Sub in a Tub Salad {Gluten Free}
This sub in a tub is the perfect easy lunch to throw together at home or prep ahead for work! It’s gluten-free and easy to make dairy-free.
Ever since, I’ve been working hard to get over 100 G of protein every day, I’m always looking for quick and easy ways to meet my goals. At least once a week, I love reaching for a deli turkey and making a sandwich or salad… or even better… a sandwich-inspired salad!
Sub in a tub in actually a menu item from Jersey Mikes where they make a sub in tupperware instead of a sandwich to make it lower carb and gluten free. This is my take on an Italian sub salad or sub in a tub with a little bit of my own twist that I honestly think is even better.
Ingredients for Sub in a Tub Salad
- Olive Oil, Red Wine Vinegar, Salt, Pepper, Garlic Powder, and Dried Oregano. This makes the oil and vinegar dressing!
- Romaine Lettuce and Cucumber. Great crunch and all the nutrients from the veggies.
- Deli Turkey, Deli Ham, and Prosciutto. All these meats are delicious and make sure the salad has a high protein content.
- Provolone Cheese. Optional and you can omit for dairy-free.
- Pickled Red Onions. I just use my recipe for making quick pickled onions!
- Gluten-Free Rolls. This is what I use!
How to make Sub in a Tub Salad
- Step One. Combine ingredients to make the dressing.
- Step Two. Add all the ingredients for the salad to the bowl and pour the dressing on.
- Step Three. Season further and enjoy!
Tips & Tricks
- Switch up the protein. Chicken lunch meat will also work as well as subbing all of the ham for turkey, or leaving out the prosciutto. You can totally make it flexible to what works for you.
- Make the dressing creamy. I love a vinaigrette dressing on this salad, but if you want to make it creamy, add some mayo.
How to meal prep this salad
This salad is best fresh, so I recommend storing the dressing, chopped deli meat, and lettuce and cucumber in three separate containers and combining when you’re ready to serve it.

Ingredients
For the dressing
- 2 tbsp olive oil
- 2 tbsp red wine vinegar
- 3/4 tsp salt
- 1/4 tsp black pepper
- 1/2 tsp garlic powder
- 1/2 tsp dried oregano
For the salad
- 4 cups romaine lettuce, chopped
- 3 oz deli turkey, chopped (in a dice)
- 2 oz deli ham, chopped
- 1 oz prosciutto, chopped
- 2 oz provolone cheese, chopped (optional, omit for dairy free)
- 1/2 cucumber, sliced into thin half-moons
- 1/3 cup pickled red onions
- 2–3 small gluten-free rolls, chopped into cubes, optional (this is what I use)
- Salt and pepper
Instructions
- Combine the ingredients for the dressing a small bowl and whisk well to combine. Set aside.
- Add the romaine, turkey, ham, prosciutto, provolone, cucumber, and pickled onion to a large bowl. Pour over the dressing and toss well to coat. Add the bread if using and lightly toss again.
- Season the salad further to taste with salt and pepper.
