Okra is a delicious and healthy summer vegetable that is often associated with being fried. I used to think that frying okra was really the only to make it, but that’s definitely not the case! It’s great sauteed in a pan, in soups like gumbo, grilled, or oven-roasted.

This oven-roasted okra is a simple and easy summer side for when you want that okra flavor but without the frying. All you need if fresh okra and a few simple pantry staples for this recipe that’s paleo, whole30, AIP and vegan.

The ingredients for the oven-roasted okra

  • Okra
  • Avocado oil
  • Balsamic vinegar
  • Lemon
  • Garlic and onion powder

How to Make Oven Roasted Okra

  • Prepare the okra by washing well and slice off the tops. Continue to slice the okra into about 4-5 slices per piece of okra and set aside.

  • Add the okra to the baking sheet and top with oil, balsamic, lemon juice, and seasonings. Toss to coat.
  • Transfer to the oven and roast for 20-25 minutes, flipping halfway through.

Look for okra that is bright green! You want to avoid okra that is too soft or has too many black spots.

  • 1 lb okra
  • 2 tbsp avocado oil
  • 1 tbsp balsamic vinegar
  • 1 tbsp lemon juice
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 3/4 tsp sea salt
  • 1/4 tsp black pepper (omit for AIP)

  1. Preheat the oven to 400 F and line a baking sheet with parchment paper.
  2. Prepare the okra by washing well and slice off the tops. Continue to slice the okra into about 4-5 slices per piece of okra and set aside.
  3. Add the okra to the baking sheet and top with oil, balsamic, lemon juice and seasonings. Toss to coat.
  4. Transfer to the oven and roast for 20-25 minutes, flipping halfway through.
  5. Remove from the oven and allow to cool slightly before serving.
