This protein breakfast box is the perfect egg-free option for breakfast on the go! It’s paleo, gluten and grain-free, and easy to prep ahead of time.

Have you ever had a protein breakfast box? They’re usually made with hard-boiled eggs, cottage cheese, and almonds… all great ingredients, but if you’re intolerant to eggs, dairy, and nuts, it leaves you with few options. Not anymore! This breakfast box is packed with protein without the eggs, dairy, or nuts!

The Ingredients for the Protein Breakfast Box

  • Ground Chicken. Turkey works as well.
  • Sweet Potato, Apple, Coconut Flour, Avocado Oil, Maple Syrup, Salt, Pepper, Dried Thyme, and Dried Sage. These ingredients combine with the ground chicken to make the sausages.
  • Coconut Yogurt. You can also use Greek yogurt for more protein if you tolerate dairy, but I stick with coconut.
  • Hemp Hearts. You’ll omit these for AIP, but if you do tolerate them, they’re packed with protein! It’s one of my favorite ways to get my toddler extra protein.
  • Blueberries. I love adding these to my breakfast box for the flavor and nutrients.

Tools and Storage for the Egg-Free Protein Breakfast Box

  • Food Processor. This is key for shredding the sweet potato and apple.
  • Divided Glass Container. I highly recommend investing in divided containers! They are cute and fun and save you tons of space by only needing to take one container!

How to make Egg Free Protein Breakfast Box

  • Step One. Shred the sweet potato and apple. Steam the sweet potato mixture and pat with a clean towel to strain excess liquid.
  • Step Two. Combine the sweet potato and apple mixture with the remainder of the sausage ingredients.

  • Step Three. Form the sausages and cook in a pan until cooked through.
  • Step Four. Add the sausage to the breakfast box along with blueberries, and the yogurt, and top with hemp hearts.

How long does this breakfast box stay fresh?

This breakfast box will stay fresh for 2-3 days in the fridge.

How do you reheat it?

If you’re at home, you can easily reheat the sausage over the stovetop. If on the go, you can reheat in a toaster oven or microwave.

Can you use other proteins in this sausage?

You can use either ground chicken or turkey in this sausage.

Can you freeze these breakfast sausages?

Yes! I suggest fully cooking them through and freezing them. If you’d rather freeze them raw, I would just make sure that the sweet potato is fully cooled before forming it with the sausages and freezing.

Egg Free Protein Breakfast Box

Ingredients

For the sausage

  • 1/2 medium sweet potato, peeled
  • 1/2 apple, peeled
  • 1 lb ground chicken
  • 1 tbsp coconut flour
  • 3 tbsp avocado oil (divided)
  • 1 tbsp maple syrup
  • Salt and pepper (omit pepper for AIP)
  • 1 tsp dried thyme
  • 1/2 tsp dried sage

For the breakfast box

  • Coconut yogurt
  • Hemp hearts (omit for AIP)
  • Blueberries

Instructions

  1. Using a food processor, shred the sweet potato and apple until fully shredded
  2. Steam the sweet potato mixture by adding it to a bowl along with about 2 tbsp of water. Cover with a paper towel and microwave for 2 minutes to lightly soften. Pat with a clean towel to strain excess liquid.
  3. Combine the ground chicken, sweet potato, apple, coconut flour, 1 tbsp avocado oil, maple syrup, and seasonings and fold until well combined.
  4. Form the mixture into 7-8 sausages that are round and slightly flattened. Set aside.
  5. Using a large deep pan, heat the avocado oil over medium-high heat. Add 2-3 sausages to the pan at a time, being careful to not overcrowd the pan. Cook for 3-5 minutes on each side or until crisped and browned. The internal temperature should read 165 F.
  6. Add the sausage to the breakfast box along with blueberries, and the yogurt, and top with hemp hearts.
