What is Tabbouleh Salad?
Tabbouleh Salad is a delicious veggie-heavy salad that’s traditionally made with a grain (most often bulgur wheat, but many recipes use quinoa) and fresh vegetables and herbs like cucumber, tomato, red onion, parsley, and mint!
This grain-free version of the classic is made with cauliflower instead of a grain and is still packed with tons of vegetables and flavor. It’s paleo, whole30, keto, vegan, and can be modified to be AIP.
The Ingredients for Cauliflower Tabbouleh Salad
- Riced cauliflower
- Cucumber
- Tomato
- Red onion
- Parsley
- Mint
- Dill
- Olive oil & lemon
How to Make Cauliflower Tabbouleh Salad
- Prep the dressing: Using a small bowl, whisk the olive oil, lemon juice, salt, pepper, and garlic together. Set aside.
- Combine the salad: Add the remainder of the ingredients to a large bowl and toss to combine. Add the oil and lemon mixture and stir to combine. Season further to taste and serve fresh.
Can you use frozen riced cauliflower to make this salad?
I love buying frozen riced cauliflower for the sake of convenience, but it wouldn’t be best in this particular recipe as it’s a lot more watery. You can either make cauliflower rice in a food processor at home or buy it freshly riced for the best results for this recipe!
Can you cook the cauliflower beforehand?
This is meant to be a raw salad, but you could lightly cook the cauliflower beforehand if you’d prefer.

- 1/4 cup olive oil
- 3 tbsp lemon juice
- 1 tsp sea salt
- 1/4 tsp black pepper (omit for AIP)
- 1 clove garlic, minced
- 2 1/2 cups cauliflower, riced
- 1/4 cup red onion, diced
- 1/4 cup tomato, diced (omit for AIP, sub more red onion)
- 1/4 cup cucumber, diced
- 2 tbsp fresh dill, chopped
- 3 tbsp fresh mint, chopped
- 1/3 cup parsley, chopped
Instructions
