One of my New Year’s resolutions for 2026 was to eat more soup and bone broth! It’s warming, it helps you slow down while you eat, and it’s easy to make it anti-inflammatory. I have continued all year loving soup all times of day. I have so many great soup recipes on my blog like Greek lemon chicken soup and egg drop soup, but wanted to add a new recipe for a protein and fiber filled soup that is perfect for back to school season. This chickpea chicken soup is filled with satisfying chicken bone broth, which I love to make with my recipe for slow cooker chicken bone broth, chicken, veggies, and chickpeas.

  • Ghee. You can also avocado oil.
  • Yellow Onion, Carrots, White Sweet Potato, and Celery.
  • Chicken Bone Broth. I love to use my homemade chicken bone broth or you can buy chicken bone broth.
  • Chickpeas.
  • Chicken Breast. I use fully cooked and shredded chicken in this recipe, so you could use a rotisserie chicken or other pre-prepped chicken.

How to Make Chickpea Chicken Soup

Step One. Saute the vegetables

Step Two. Add the broth, seasonings, and chickpeas. Bring to a boil and reduce to a simmer for 15 minutes.

Step Three. Add the cooked chicken, lemon juice, and frozen peas. Simmer on low for another few minutes to heat the chicken.

Chickpea Chicken Soup

Ingredients
 

  • 2 Tbsp Ghee, sub avocado oil
  • ½ yellow onion, diced
  • 2 carrots, peeled and diced
  • 1 white sweet potato, peeled and diced
  • 2 stalks celery, diced
  • 2 cloves garlic, minced
  • Salt and pepper
  • 6 cups chicken bone broth
  • 1 tsp dried sage
  • 2 tsp dried thyme
  • 1 15 oz can of chickpeas, drained and rinsed
  • 1 lb Chicken Breast, fully cooked and shredded
  • ½ cup Peas, Frozen
  • 1 Lemon juiced
  • 2 tbsp parsley, chopped

Instructions
 

  • Using a large pot, heat the ghee over medium heat.
  • Add the onion and sauté for 3-4 minutes. Add the carrots, white sweet potato, celery, and garlic, and lightly season with salt and pepper. Sauté for 4-5 more minutes or until lightly tender.
  • Add the broth, seasonings, and chickpeas. Bring to a boil and reduce to a simmer for 15 minutes.
  • Add the cooked chicken, lemon juice, and frozen peas. Simmer on low for another few minutes to heat the chicken.
  • Serve topped with fresh parsley!
