What is watermelon radish?

Watermelon radish is one of my favorite vegetables! It has a beautiful light green exterior and a hot pink exterior, making it one of the most aesthetic vegetables in terms of color.

Watermelon radish is great raw, julienned, or pickled! Pickled watermelon radish is easy to make and delicious on a variety of dishes like tacos, bowls, and salads. It’s the perfect way to jazz up your dishes to impress your guests, or just add more aesthetics and flavor to your own cooking.

What does pickled watermelon radish taste like?

Radishes tend to be fairly peppery, and watermelon radish is similar. It’s mildly peppery and very lightly sweet. When pickled, it dulls the peppery flavor just a bit and adds a bright pop of acid.

The ingredients and tools to make pickled watermelon radish

  • Watermelon Radish. Depending on where you’re located, these are easier to find in the spring and summer.
  • Apple Cider Vinegar. Traditionally you would pickle with white vinegar, but apple cider vinegar works great here as well.
  • Coconut Sugar. This recipe uses coconut sugar instead of white, refined sugar.
  • Salt, Peppercorns and Bay Leaf. This adds a bit more depth of flavor to the radishes.
  • Mandolin Slicer. You don’t need a mandolin slicer, but I find it’s much easier to do uniform slices with this than with a knife.
  • A Round Jar. I like using weck jars.

How to make pickled watermelon radish

  • Step 1. Slice the watermelon radish and add to a jar with bay leaf and peppercorns.
  • Step 2. Using a small saucepan, combine the water, vinegar, salt, and coconut sugar. Allow to come to a simmer for 3-4 minutes, until the sugar is dissolved. Remove from the heat.

  • Step 3. Carefully pour the liquid over the watermelon radish, fully covering the radish. Allow to cool before covering the jar with a lid and placing it in the fridge. Allow to cool in the fridge for 45 minutes to an hour before enjoying and keep for up to a week.

Tips & tricks for pickled watermelon radishes

  • Slice them thin. I love using a mandolin slicer for this, but you can also use a knife is you’re careful and uniform with your cuts.
  • Scrub the watermelon radish well beforehand. You want to make sure it’s super clean!

  • 1 bay leaf
  • 1 tsp peppercorns (omit for AIP)
  • 1/2 cup apple cider vinegar
  • 1/2 cup water
  • 1 tsp salt
  • 2 tsp coconut sugar

Instructions

  1. Wash the watermelon radish well to remove any dirt or impurities. Using a mandolin slicer or knife, slice the watermelon radish thin. Stack the radish in a clean glass jar and add the peppercorns and bay leaf. Set aside.
  2. Using a small saucepan, combine the water, vinegar, salt, and coconut sugar. Place over medium heat and whisk to combine. Allow to come to a simmer for 3-4 minutes, until the sugar is dissolved. Remove from the heat.
  3. Carefully pour the liquid over the watermelon radish, fully covering the radish. Allow to cool before covering the jar with a lid and placing it in the fridge. Allow to cool in the fridge for 45 minutes to an hour before enjoying and keep for up to a week.
