What is a Bellini?

A Bellini is an Italian cocktail that’s traditionally made with prosecco and peach nectar. They’re sweet, a bit fizzy, refreshing, and delicious!

In college, I worked in an Italian pizza and wine bar and saw my fair share of bellini’s being made… but always with what looked like highly processed peach syrup that wasn’t at all fresh! I wanted to recreate this cocktail as a mocktail made with real peaches and reimagined as a frozen refresher.

How to make a bellini mocktail

  • Add the frozen sliced peaches and sparkling water to a blender and allow to sit for 2-3 minutes for the fizz to calm down a bit
  • Add crushed ice, lime juice, and honey
  • Blend low until smooth
  • Serve with lime wedges, fresh fruit and mint if desired

Tips & tricks for making a frozen bellini mocktail

Use fresh peaches, and slice and freeze them.

This will guarantee it’s really delicious! A lot of frozen peaches have additives like citric acid, so this ensures that it’s as fresh as possible. If you can’t find fresh peaches and have a good source for frozen, that works too.

Make sure the water isn’t too fizzy.

You want to have the water sit for a few minutes to calm down the fizz before blending.

The Ingredients for the bellini mocktail

Frozen peaches

You can use frozen peaches that you buy in the grocery store, or slice and freeze your own.

Sparkling water

I am obsessed with topo chico. We almost never let ourselves run out of it. I used two bottles of topo chico for this recipe, but you can easily use other sparkling waters.

Crushed ice

Crushed ice help to keep it nice and chilled, and gives it a bit of a slushie feel!

Lime 

A little bit of fresh lime juice adds some nice acid.

Honey

This is optional if you’d prefer to go lower on the sugar.

Ingredients

Scale
  • 4 cups sparkling water (like topo chico)
  • 2 1/2 cups frozen peaches, sliced
  • 1 cup crushed ice
  • Juice of one lime
  • 2 tsp honey (optional)
  • Berries & lime wedges to serve

Instructions

  1. Add the sparkling water and peaches to a high-speed blender. Allow sitting for 2-3 minutes to allow the fizz of the water to relax.
  2. Add crushed ice, lime juice, and honey to the blender.
  3. Blend on low for 20-30 seconds until smooth.
  4. Serve immediately with lime wedges, fresh fruit, and mint if desired.
