- Simple ingredients! Typically, marshmallow fluff is mostly corn syrup, sugar, and egg whites, and I wanted to make a version that was a bit simpler and wholesome and this is the real deal!
- New addition for fall baking. I love all the fall baking recipes from pumpkin pie bars to pumpkin pie donut holes, but adding pumpkin spice marshmallow fluff adds a new twist! You can add to other fall baked treats or add to make a recipe feel more fall!
How to use homemade marshmallow fluff
- Use it as a cake frosting! Before it sets, spread it onto cake or cupcakes for the perfect marshmallow-flavored frosting!
- Use it as a dip. I love to dip fruit or graham crackers in the marshmallow fluff for the best s’mores vibes.

How to make homemade pumpkin spice marshmallow fluff
Here are the simple steps, with photos, to make this recipe. Find full instructions in the recipe card.
Step one. Using the bowl of a stand mixer, add 1/4 cup of water to the base, and then sprinkle over 1 tbsp of gelatin. After it hardens, add the honey and water mixture and mix until the texture starts to get thick.
Step two. Add the pumpkin spice, pumpkin puree (if using), and vanilla extract. Whip for another 2-3 minutes or so, or until the mixture is very thick like marshmallow fluff!
Step three. Spoon the fluff into a large glass container. Store in a cool dry place for up to two weeks, and enjoy as a dip with graham crackers, a filling for whoopie pies, etc.
Storage instructions
If you add the pumpkin puree, the marshmallow fluff will only last a few days in the fridge. If you omit the pumpkin puree, you can store it in a cool, dry place for up to two weeks!

The speed and power of your stand mixer will determine how quickly your marshmallow fluff thickens up. If you find that it’s taking too long, you can simply pop it in the fridge for a few minutes to try and let it set further.

- 1 tbsp gelatin
- ¾ cup water, divided
- 1 cup honey
- 2 tbsp pumpkin puree, see notes
- 2 tsp pumpkin pie spice, plus extra on top
- 1 tsp vanilla extract

- Using the bowl of a stand mixer (see notes for hand mixer method) add 1/4 cup of water to the base, and then sprinkle over 1 tbsp of gelatin. Set aside to allow to harden. Add the whisk attachment to the stand mixer for later.
- Using a medium stainless steel pot, combine 1/2 cup of water with 1 cup of honey. Set the pot over medium-high heat and heat until it reaches 240 F (use a candy thermometer to check the temperature).
- Close the stand mixer and slowly (and carefully) pour the water and honey mixture into the stand mixer as you increase the speed to high speed. Whip the mixture for 6-8 minutes. The mixture should start to get thick.
- Add the pumpkin spice, pumpkin puree (if using), and vanilla extract. Whip for another 2-3 minutes or so, or until the mixture is very thick like marshmallow fluff!
- Spoon the fluff into a large glass container. Store in a cool dry place for up to two weeks, and enjoy as a dip with graham crackers, a filling for whoopie pies, etc.
