Mashed white sweet potatoes and sweet potato casserole with marshmallows have always been some of my favorite holiday side dishes! There’s always more than enough work to go around for holiday cooking, so sometimes I want a shortcut. These sweet potato casserole bites are the perfect shortcut for when you want sweet potato casserole but for way less work!

These sweet potato casserole bites are the perfect appetizer or dessert for the holidays made with baked sweet potato rounds and topped off with gooey marshmallows!

  • They’re easy to make. I’m all about cutting the work in half over the holidays, like making these gluten-free apple pie roll-ups instead of a whole apple pie. This recipe is much easier and faster than making an entire casserole.
  • It’s the perfect finger food. Just like some of my other Thanksgiving appetizer recipes like these gluten-free stuffed mushrooms, this recipe is just the perfect little bite.

Substitions & modifications

  • Coconut oil. This is the perfect swap for ghee in this recipe if you’re AIP.
  • Maple sugar or brown sugar. Either will work in place of the coconut sugar.

How to make Sweet Potato Casserole Bites

Here are the simple steps, with photos, to make this recipe. Find full instructions in the recipe card.

Step one. Slice the sweet potato into thin 1/4″ slices.

Step two. Brush the sweet potato with ghee and coconut sugar.

Step three. Bake in the oven until tender.

Step four. Top with the marshmallows while the sweet potato is still warm. Sprinkle with cinnamon.

Tips & Tricks

  • Use the right shape of sweet potato. I recommend finding a sweet potato that’s skinny and long to make sure these bites are indeed bite sized without having to cut it down further.
  • Make sure you add the marshmallow when the sweet potato bites are still warm. This is what melts the marshmallow!

Can you make sweet potato casserole bites ahead of time?

These are definitely best fresh as the marshmallows will set as they cool.

Can you make sweet potato bites with pecans?

I’m personally allergic to pecans so I leave them off, but you can add them at the end, on top of the marshmallow!

Description

These sweet potato casserole bites are the perfect easy appetizer or holiday dessert! They’re made with sweet potato, a marshmallow topping, and a sprinkle of cinnamon.


Ingredients

Scale
  • 1 large sweet potato, peeled
  • 2 tbsp ghee, melted (sub coconut oil for AIP)
  • 1 tbsp coconut sugar
  • Pinch of salt
  • 1214 marshmallows (I use these sliced in half)
  • 1/2 tsp cinnamon

Instructions

  1. Preheat the oven to 400 F and line a baking sheet with parchment paper.
  2. Slice the sweet potato into thin 1/4″ slices and place on the baking sheet. You should have roughly 24 slices, but this will vary depending on the size of your sweet potato.
  3. Combine the ghee, salt and coconut sugar and brush the sweet potato slices of both sides.
  4. Transfer to the oven and bake for 15 minutes or until tender. Remove from the oven.
  5. While the sweet potato is still warm, carefully add the marshmallows on top, pressing them down a bit. The hot sweet potato will lightly melt the marshmallows.
  6. Sprinkle with cinnamon and serve as a sweet appetizer or dessert.

Notes

I recommend buying a long, skinny sweet potato so the bites are small and bite-sized!
