Pizza soup is exactly what it sounds like – it takes all of the bold and savory flavors of a pizza and goes into a warm and nourishing bowl of soup, made even heartier with noodles! When you need the double comfort of both pizza and soup, this is the answer to everything you need. Most pizza soups, however, are made with gluten, grains, dairy, and refined oils.

That’s where this gluten-free pizza soup comes in! It is the pizza soup of your dreams, made with healthy, nourishing and delicious ingredients. It is made with ground beef, black olives, gluten-free pasta, and more that make it taste just like pizza! It can even be made nightshade-free by using nomato sauce as the base. It’s gluten-free, and can easily be made paleo and AIP-friendly.

The Ingredients for Pizza Soup

  • Ground Beef
  • Tomato Sauce: Sub nomato sauce for AIP.
  • Chicken Broth
  • Onion & Garlic Cloves
  • Mushrooms: You can slice them yourself, or buy them pre-sliced to save time.
  • Black Olives: You can slice them yourself, or buy them pre-sliced to save time.
  • Dried Oregano & Dried Parsley
  • Salt & Black Pepper: Omit pepper for AIP.
  • Gluten-free Farfalle: Sub grain-free penne for AIP and Paleo.
  • Fresh Chopped Basil & Parsley: for topping!

How to make Pizza Soup

  • Cook Ground Beef & Vegetables: Using a large pot, brown the ground beef over medium heat, seasoning with salt and pepper. One browned, set aside, reserving 2 tbsp of fat in the pot. Add the onion and garlic to the pot and saute for 4-5 minutes or until the onions and lightly translucent.
  • Combine & Simmer: Add the ground beef back to the pot along with the tomato sauce, broth, mushrooms, olives, oregano, and parsley. Bring to a low boil and allow to simmer for 5 minutes or until the mushrooms are lightly tender.
  • Cook Pasta: Add the pasta to the soup and stir well to combine. Allow to simmer for 10-11 minutes or until the pasta is tender and cooked to your liking.
  • Garnish & Serve: Serve topped with fresh parsley, basil and salt further to taste.

How do you make this Pizza Soup a freezer meal?

  1. Cook the ground beef and directed and allow to fully cool.
  2. Add all of the ingredients (except for the pasta and herbs for topping) to a bag.
  3. Freeze flat for 2-3 months.
  4. Transfer to the fridge and allow to fully defrost before adding to a pot and cooking as directed.

Can you fully make this soup and then freeze it?

This soup is definitely best using the later technique as cooked pasta doesn’t really freeze well.

  • 4 cloves garlic, minced
  • 3 cups tomato sauce (sub nomato sauce for AIP)
  • 3 cups chicken broth

  • 1/4 cup black olives, sliced
  • 2 tsp dried oregano
  • 2 tsp dried parsley
  • 1 cup gluten-free farfalle (sub grain-free penne for AIP/paleo)
  • Fresh chopped basil and parsley, for topping
