These air fryer avocado egg rolls are a Cheesecake Factory copycat made low carb, paleo, keto, and AIP-friendly! They’re the perfect appetizer when you’re feeling fancy!

Air-Fryer Avocado Egg Rolls

After making my first version of egg rolls here on the blog, I had to try this Cheesecake factory copycat! This version isn’t at all traditional, but a spin on the original version from The Cheesecake Factory. Their version has sundried tomatoes, however, to keep it AIP, we left that out and went with bacon instead. Not a bad substitute in my mind! 😆

You might be thinking that egg rolls sound cumbersome to make from home, but I can assure you that this recipe will leave you pleasantly surprised and wanting to make them again and again! They’re perfect for appetizers or snacks, or even serving as a side dish.

The Ingredients Needed for Avocado Egg Rolls

  • Avocados. The larger you can find for these, the better!
  • Bacon. Be sure to choose bacon that doesn’t have any sugar added in order to keep it compliant. I like the Applegate brand.
  • Red onion.
  • Minced garlic.
  • Cilantro.
  • Lime juice.
  • Salt + pepper. You can omit the pepper for AIP.
  • Coconut wraps. I would recommend these Nuco coconut wraps!
  • Avocado oil.

Equipment to make the egg rolls

  • Air Fryer. I use a Dash Compact Air Fryer and have space to fry two of these at a time, but any air fryer should likely work great with this recipe!

How to Make Avocado Egg Rolls

  • Prep the filling. Mash the avocado in a medium bowl and combine with the bacon, red onion, cilantro, garlic, salt, pepper, and lime juice. Set aside.

  • Stuff the coconut wraps. Add a quarter of the filling to the center of each coconut wrap. Roll the wrap by folding up the bottom edge about a third of the way, then folding in the two corners, and rolling the egg roll tightly. Add a dab of water to the edge of the egg roll to seal. Repeat with each of the 4 coconut wraps. (see example below)

  • Cook + serve. Preheat the air fryer to 250 F, and prepare the egg rolls by very lightly brushing with avocado oil. Place the egg rolls in the air fryer and set to 4-5 minutes. Carefully remove from the air fryer with tongs. Serve by themselves or with a side like a sour cream dip, or a cilantro lime dressing.

 

Can you add protein to these egg rolls?

You can add protein as long as it’s fully cooked! Here are some ideas for proteins to add to the egg rolls…

  • Cooked ground pork
  • Cooked ground chicken
  • Cooked ground beef

Why are there no eggs in these egg rolls?

Egg rolls get their name from the egg wrapper, so traditional egg rolls actually don’t have eggs in them.

Can you make this recipe in the oven instead?

Technically, you can! Set your oven to 350 F and bake for 12-15 minutes. I would recommend flipping halfway through to ensure crispiness on all sides.

What do you serve with these egg rolls?

A dairy-free sour cream dip (like this one), or a cilantro lime dressing (like this one) would be perfect options with this!

  • 2 large avocados

  • 1/4 red onion, diced

  • Juice of half a lime
  • 1/2 tsp salt
  • 1/4 tsp black pepper (omit for AIP)
  • 4 coconut wraps
  • Avocado oil for brushing the wraps

Instructions

  1. Mash the avocado in a medium bowl and combine with the bacon, red onion, cilantro, garlic, salt, pepper, and lime juice. Set aside.
  2. Add a quarter of the filling to the center of each coconut wrap, being careful not to overfill. Roll the wrap by folding up the bottom edge about a third of the way, then folding in the two corners, and rolling the egg roll tightly. Add a dab of water to the edge of the egg roll to seal. Repeat with each of the 4 coconut wraps.
  3. Preheat the air fryer to 250 F, and prepare the egg rolls by very lightly brushing with avocado oil. Place the egg rolls in the air fryer and set to 4-5 minutes (depending on how crispy you like them).
  4. Carefully remove from the air fryer with tongs. Allow cooling slightly before serving by themselves or with a side like a sour cream dip, or a cilantro lime dressing.
