  • Light and airy. Homemade marshmallow fluff is made by whipping a honey, gelatin and water mixture until it’s light and fluffy. It’s sweet, but doesn’t feel heavy, making it perfect in drinks and dips.
  • Easy to make. All you need is a candy thermometor and stand mixer with the right temperature and method to make perfect marshmallow fluff.
  • Honey instead of corn syrup. This marshmallow fluff is made with honey as the base instead of corn syrup, for a much better flavor!

How do you use matcha marshmallow fluff?

  • In a latte! This marshmallow fluff is absolute heaven over a matcha latte. If you add it to an iced matcha, it will set if it sits for too long. I recommend drinking it in a timely manner 🙂 
  • As a fruit dip. Use it as a dip for strawberries or fruit skewers!
  • Add it to whoopie pies. The yummiest whoopie pie filling between two cookies!

Recipe Ingredients

  • Matcha. If you’re not a fan of matcha, it may just be because you haven’t tried the right matcha yet. There are some questionable matcha powders out there that are seriously lacking in flavor and color. I’ve used this matcha for years, and you can truly taste the difference!
  • Vanilla Extract.
  • Honey. Maple syrup should be able to be swapped!
  • Water.

Tools for Matcha Marshmallow Fluff

  • Candy thermometer. This is key for making marshmallow fluff to ensure you reach the right temperature!
  • Stand Mixer. You can also use a hand mixer, but it’s going to take much longer.

How to Make Matcha Marshmallow Fluff

Step One. Add 1/4 cup of water to the stand mixer then sprinkle over 1 tbsp of gelatin. Set aside to allow to harden while combining honey and water on the stove until it reaches 240 F before adding to the stand mixer and whipping. Then add the vanilla and matcha powder and continue to whip.

Step Two. Spoon the fluff into a large glass container. Store in a cool dry place for up to two weeks, and enjoy as a dip for fruit, graham crackers, in whoopie pies, or over a matcha latte!

Michelle’s Tips & Tricks

  • Adapt the method with an electric hand mixer. You can also use a hand mixer and simply add the water and gelatin to a large bowl instead of a stand mixer base. It will take longer to whip. 
  • Remember it does set! Keep in mind that this fluff sets at room temperature, but all you have to do is add however much you want to a microwave-safe dish and microwave for about 10 seconds for it to return to its original texture!

  • Using the bowl of a stand mixer (see notes for hand mixer method) add 1/4 cup of water to the base, and then sprinkle over 1 tbsp of gelatin. Set aside to allow to harden. Add the whisk attachment to the stand mixer for later.
  • Using a medium stainless steel pot, combine 1/2 cup of water with 1 cup of honey. Set the pot over medium-high heat and heat until it reaches 240 F (use a candy thermometer to check the temperature).
  • Close the stand mixer and slowly (and carefully) pour the water and honey mixture into the stand mixer as you increase the speed to high speed. Whip the mixture for 7-8 minutes.
  • Add the vanilla extract and sifted matcha powder. Whip for another 2-3 minutes or so, or until the mixture is thick like marshmallow fluff!
  • Spoon the fluff into a large glass container. Store in a cool dry place for up to two weeks, and enjoy as a dip for fruit, graham crackers, in whoopie pies, or over a matcha latte!
