This s’mores fudge is the perfect no-bake summer treat! It’s dairy-free, gluten-free and has everything you love about s’mores.

How do you make fudge without condensed milk?

Sweetened condensed milk is the default to reach for when you’re making fudge. It makes the fudge creamy and sweet, but of course, it doesn’t work if you’re dairy-free. But luckily, you can make fudge that’s just as creamy with a combination of a nut or seed butter, and full-fat coconut milk! It’s dairy-free, lower in sugar, and it still makes the perfect fudge.

The Ingredients to make S’mores Fudge

  • Dairy-Free Chocolate Chips. You can use any brand you prefer, but I love the brand, enjoy life!
  • Creamy Nut Butter. I use creamy barney butter, but you can use any nut or seed butter.
  • Full-Fat Coconut Milk. I use the brand native forest.
  • Marshmallows. I use sweet apricity marshmallows. Thank you for sending me these marshmallows to make this recipe with, Sweet Apricity!
  • Gluten-Free Graham Crackers. You can either buy graham crackers at the store, or you can make homemade. I also recommend checking out options like these simple mills cookies as they have a similar flavor to graham crackers.

How to make Gluten & Dairy-free S’mores Fudge

  • Step One. Combine the chocolate chips, nut butter, coconut milk, and coconut oil in a large glass or metal bowl.
  • Step Two. Melt the mixture over a double boiler and line a loaf pan.
  • Step Three. Carefully stir most of the crushed graham crackers and marshmallows into the fudge mixture. Press the fudge mixture into the loaf pan and flatten. Top the fudge with a few extra marshmallows and crushed graham cracker.

  • Step Four. Transfer to the fridge and allow to set for 3-4 hours, until totally hardened. Slice and serve chilled.

Tips & tricks

  • Chop the marshmallows if you’re using larger ones. If you’re using sweet apricity marshmallows, I recommend cutting them up a bit! The marshmallows are pretty big, so you get more bang for your buck this way.
  • Vary your crushed graham cracker pieces. I wouldn’t get them all into a fine powder… keep some pieces bigger and some smaller!

What if you’re allergic to nuts?

If you’re allergic to nuts you can also use a seed butter like sunflower seed butter. I haven’t tried this recipe with tigernut butter but let me know if you do!

What if you’re allergic to coconut milk?

The full-fat coconut milk is important for the creamy texture, but you can try creamy alternative milk like hemp milk.

Can you make fudge with marshmallows? How do ensure they don’t melt?

I was skeptical about making fudge with marshmallows, but it can be done! The trick is just letting your fudge mixture cool for a few minutes before adding the marshmallows. One or two may still melt if they hit a hotter spot of the fudge, but it just adds to the gooey vibes.

Storage Instructions

Store this fudge in an airtight container in the fridge for 3-4 days in the fridge. The fudge needs to stay chilled to hold it’s shape, so be cautious about serving it outside on warm summer days.

Instructions

  1. Combine the chocolate chips, nut butter, coconut milk, and coconut oil in a large glass or metal bowl. There’s no need to mix at this point.
  2. Fill a medium pot 2/3rds of the way with water and bring to a low simmer. Set the bowl over the pot of water (making a double boiler) and carefully stir the chocolate mixture to melt until totally creamy. Carefully remove the bowl and set it aside to cool for about 5 minutes.
  3. While the fudge mixture cools, line a 9×5 loaf pan with parchment paper and lightly grease.
  4. Carefully stir most of the crushed graham crackers and marshmallows into the fudge mixture. Press the fudge mixture into the loaf pan and flatten. Top the fudge with a few extra marshmallows and crushed graham cracker.
  5. Transfer to the fridge and allow to set for 3-4 hours, until totally hardened. Slice and serve chilled.
