I love using ground chicken. Like, some of my most used recipes in my own kitchen (and yours!) are made with ground chicken. I’m looking at you sweet potato chicken poppers.
Just grab a pound of ground chicken and you have so many possibilities. Bowls, nuggets, and of course, burgers!
I have always been a fan of chicken burgers, jazzing them up with different flavor combos like spinach avocado chicken burgers and sweet & sour chicken burgers. Now, these pickle ground chicken burgers are the latest chicken burger recipe I am loving! Here’s why you will too…

- Ground Chicken. If you can’t find ground chicken at the butcher counter, you can also use a food processor to grind your own at home. Or, you can just use ground turkey!
- Dill Pickles and Pickle Juice.
- Fresh Dill.
- Coconut Flour. I find that I always need coconut flour as I use previously frozen chicken, and it has a lot more moisture! If you use a chicken that’s drier, you may not need as much coconut flour.
- Salt and Pepper, Dried Parsley, Garlic Powder, and Onion Powder.
- Gluten-Free Buns.
- Green Leaf Lettuce and Red Onions. I love these for topping the burgers!
- Mayo and Whole Grain Mustard. These are my favorite spreads on these burgers, but you could switch it up if you prefer differently!
How to make Pickle Ground Chicken Burgers
Here are the simple steps, with photos, to make this recipe. Find full instructions in the recipe card.

Step one. Combine the ground chicken, diced pickles, pickle juice, coconut flour and seasonings.

Step two. Mix well to fully incorporate.

Step three. Form into 4 burgers grill for 4-5 minutes per side or until cooked through. Remove from the grill and allow to rest.

Step four. You can serve the burgers in a bowl with extra pickles on top, and on buns topped with mayo, mustard, lettuce, sliced onion, and extra pickles!
Michelle’s Tips & Tricks
- Adjust the coconut flour. I use previously frozen chicken and it has a lot more moisture, so I need the coconut flour! If you use a chicken that’s more dry, you may not need as much coconut flour.
- Adjust the toppings! I love this recipe in a bowl with toppings or on a delicious gluten-free bun with different toppings.

Ingredients
- 1 lb ground chicken, or turkey
- ½ cup dill pickles, diced
- 2 tsp fresh dill, chopped
- 1 tbsp coconut flour
- 2 tsp pickle juice
- Salt and pepper
- 1 tsp dried parsley
- 2 tsp garlic powder
- 1 tsp onion powder
To serve
- Sliced pickles
- GF buns
- Green leaf lettuce
- Sliced red onions
- Mayo
- Whole grain mustard
Instructions
- Using a large bowl, combine the ground chicken, diced pickles, pickle juice, coconut flour and seasonings. Mix well to fully incorporate and form into 4 burgers. Set aside.
- Grease a grill or grill pan well and add the burgers for 4-5 minutes per side or until cooked through to 165 F. Remove from the grill and allow to rest.
- You can serve the burgers in a bowl with extra pickles on top, and on buns topped with mayo, mustard, lettuce, sliced onion, and extra pickles!
