These avocado ranch chicken burgers are the perfect flavorful burger for summer, with a bit of hidden veggies!

We all love a burger when the weather gets warmer! But your average ol’ beef burger can get a little old, especially when you’re gluten-free and skipping the bun. Bunless beef burgers can be a little lackluster. I like my burgers to have a bit more flair to them, and this avocado ranch chicken burger fits the bill. The patty itself is packed with flavor, so it stands on its own. It even has hidden vegetables for picky eaters!

Serve it by itself with a side of sweet potato fries, make it a lettuce wrap, or add some dairy-free ranch on top.

The Ingredients for the Avocado Ranch Chicken Burgers

  • Ground Chicken. You can also use ground turkey.
  • Zucchini. Make sure you shred and squeeze all the water out!
  • Coconut Flour. This helps bind the burger together.
  • Avocado Oil.
  • Dried Parsley, Dried Dill, Dried Chives, Onion Powder, Garlic Powder, Sea Salt, and Black Pepper. This gives the burger so much flavor!
  • Lime. The lime juice helps stop the avocado from browning.
  • Avocado.
  • Butter Lettuce Leaves and Dairy-free ranch. Optional, but love serving with these!

Can you leave the coconut flour out?

I use coconut flour to help bind the burgers better. You can also use a bit of another grain-free flour like tapioca starch.

Can you use turkey instead of chicken?

You can easily swap turkey in this recipe for chicken.

What if you don’t have a grill? Can you make them on the stove or in the oven?

I think a grill is best to make these burgers as you get the beautiful grill marks and flavor. The best alternative would be an indoor grill pan. However, you can also fry them in a regular pan. I haven’t tried baking them, but it should work.

Do these keep well in the fridge? Does the avocado brown?

Since these burgers have lime juice in them, it delays some of the browning of the avocado. However, I still recommend planning to eat these within a couple of days for the best flavor!

Description

These avocado ranch chicken burgers are the perfect flavorful burger for summer, with a bit of hidden veggies!

Ingredients

Scale
  • 1 lb ground chicken
  • 1/2 cup shredded zucchini (with the water squeezed out)
  • 1 tbsp coconut flour
  • 1 tbsp avocado oil (plus more if you’re frying or grilling)
  • 1 tbsp dried parsley
  • 1 1/2 tsp dried dill
  • 2 tsp dried chives
  • 2 tsp onion powder
  • 2 tsp garlic powder
  • 1 tsp sea salt
  • 1/2 tsp black pepper (omit for AIP)
  • Juice of one lime
  • 1 small avocado (or half a large avocado), diced into chunks
  • Butter lettuce leaves (optional)
  • Dairy-free ranch for serving (like this)

Instructions

  1. Prepare either a grill or a grill pan and set to medium-high heat. Grease the grill pan with avocado oil.
  2. Mix the ground chicken with the zucchini, seasonings, coconut flour, lime juice, and avocado oil until well combined.
  3. Very gently fold in the avocado slices, being careful to not smash them.
  4. Form the chicken into 4-5 burgers, spacing out the avocado to make sure it’s evenly dispersed.
  5. Grill the burgers on the grill surface (using extra avocado oil if frying in a pan) for about 4-6 minutes on each side, or until the internal temperature reaches 165 F. Remove from the heat and allow to rest for a few minutes.
  6. Serve by themselves with a side or top with a ranch dressing of your choice.
