These brownie berry parfaits are the perfect easy dessert to share! This version is gluten-free, dairy-free, paleo, and has an AIP option.

Gluten-Free Brownie Berry Parfaits

Who doesn’t love a parfait?! They’re layer with whipped cream, berries, and in this case, brownies! They’re the perfect little dessert for sharing at a gathering, or for whenever you want a small single-serve treat.

This brownie berry parfait recipe is made with paleo brownies, dairy-free whipped cream, and fresh berries. It’s a great red white and blue patriotic dessert for summer!

The Ingredients for Brownie Berry Parfaits

  • Brownies. The new brownie mix from Legit Bread company is an awesome option for a quick and easy gluten-free brownie for this recipe! As a partner of Legit Bread Company, I love these mixes and you can also buy my AIP sugar cookie mix through Legit Bread! You can also do homemade brownies like these AIP brownies. You’ll want to make the brownies ahead of time so they can fully cool, and then slice them into small cubes.
  • Fresh berries. I used blueberries and strawberries, but you can also use raspberries and blackberries.
  • Whipped cream. You can use a storebought whipped cream if you tolerate it, or make homemade coconut whipped cream.

How to make Brownie Berry Parfaits

  • Prepare the coconut whipped cream by adding the coconut cream to a bowl. Using a hand mixer, whip until fluffy. Add the maple syrup and vanilla extract and whip until fully combined. Set aside.
  • Assemble the parfaits by adding 2- brownie cubes to the bottom of a small glass or jar. Add a small spoonful of berries, about 2-3 tbsp of whipped cream. Repeat with another layer of brownie, berries, whipped cream, and top off the parfait with additional berries. Repeat for all of the ingredients (you should have about 4 small jars or 2 larger cups)
  • Serve fresh with a spoon and enjoy!

What jars or cups should you use for this recipe?

You can use any small cup of your choice like a small drinking glass or wine glass, or you can use a mason jar or weck jar. I like to use these tulip weck jars!

How far ahead should you prep the brownies?

As long as you let the brownies fully cool before slicing them up, you should be good!

How long can you store these in the fridge?

They’re best assembled fresh to keep the whipped cream fresh, but you can easily prep them several hours ahead of time and store them in the fridge. If you’re going to be bringing them to a gathering and want them prepped a day or so ahead of time, I suggest keeping all of the components separate and assembling a few hours ahead of time.

  • 1/2 cup coconut cream, chilled (see notes)
  • 1 tbsp maple syrup
  • 1/4 tsp vanilla extract (use alcohol-free for AIP)
  • 4 cups gluten-free brownies, cooled and cubed (use this for AIP)
  • 1 cup strawberries, diced
  • 1 cup blueberries

Notes

You can either use canned coconut cream or the coconut cream that hardens on top of a can of full-fat coconut milk when placed in the fridge overnight.
