This corn-free pudding mix is the best way to make chocolate or vanilla pudding at home easily without any corn, dairy, or preservatives.

Food allergies and intolerances can be incredibly limiting when it comes to store-bought staples. Things as simple as pudding mix can be off the table for those of us with corn and dairy intolerances. And once pudding mix is off the table, so many other recipes that use it also go out the window. 

I’ve tried very hard to find a store-bought pudding mix that’s corn-free, but even if it’s corn-free, it still has something like potato starch (which I’m also intolerant to), so it feels like an impossible task. It was time to take matters into my own hands and create the perfect mix that you can keep in your pantry whenever you want pudding or are using a recipe that calls for pudding mix!

Why you’ll love this Corn Free Instant Pudding Mix

  • Corn-free pudding mix. It’s very hard to find a store-bought mix that is corn-free so I made one!
  • Make ahead pudding mix! You can make the pudding mix ahead in a batch and then make pudding whenever you feel like it.

Ingredients for Corn Free Instant Pudding Mix

  • Sweet Rice Flour & Arrowroot Starch. I tried this recipe many times with arrowroot starch, which was a disaster… I basically made slime. The key is using a blend of rice flour and arrowroot to thicken the pudding without becoming overly stretchy. The main difference is that it doesn’t thicken immediately like corn starch. You do need to apply heat, but overall, cooking is minimal. 
  • Cane Sugar. You can probably use coconut sugar,  too, but it will change the color. 
  • Coconut Milk Powder. You can probably use other milk powders, but I developed this recipe to be dairy-free. 
  • Cocoa Powder. This is only used for the chocolate pudding. 
  • Ghee. Ghee is lactose-free, and it adds a rich flavor that you would usually get from adding egg yolks to pudding (which this recipe doesn’t do for convenience). However, it’s optional.
  • Vanilla Bean Powder and Salt. The vanilla bean powder is nice and strong and gives a great flavor!
  • Dairy-free Milk. To make the pudding with the pudding mix.

How to make Pudding From the Mix

  1. To make either dry mix, combine the ingredients in a bowl and whisk well to combine. Transfer to a jar with a lid and keep in the pantry. 
  2. To make either flavor of pudding, add the pudding mix to a pot and slowly pour in the milk, whisking as you pour. Whisk extremely well to combine and break up any clumps.
  3. Place on the stove over medium-low heat, whisk well for a few minutes until the mixture bubbles. Allow to bubble and thicken, continuing to whisk. The pudding should be thick and creamy. Add the coconut cream or ghee at the end, whisking in to melt. 

4. Remove from the heat and allow it to sit for a few minutes to cool before transferring it to the fridge to cool completely. Add berries or any other toppings you’d like!

Tips & Tricks

  • Double or triple the recipe. This recipe is for one large batch of pudding per flavor, so if you want to prep more while you’re at it, you can double or triple the amount in the jar, or make separate jars for ease!
  • Sift the cocoa powder or coconut milk powder if needed. I’ve definitely bought some cocoa powders before that clump up, so if you find that it’s clumpy, give it a quick sift to make sure it’s smooth.

Can you use this pudding mix without heat?

I tried many times to make a truly instant/no heat pudding mix, but it’s extremely hard without the corn starch. The good news is that this requires very minimal heat and no fuss like tempering eggs. The heat is just required to activate the grain free flours.

Can you use this pudding mix ninja creami recipe?

If you use a ninja creami like me, you’ll see that many recipes call for pudding mix as a thickener. Though I haven’t tried it myself yet, you can likely use this in your creami recipes! However, keep in mind that this recipe really comes together with heat, so it’s not going to do quite 1:1 in recipes that don’t require heat.

For the vanilla pudding mix

  • 1/2 cup coconut milk powder
  • 1/3 cup cane sugar (sub date sugar, though it will change the color)
  • 3 1/2 tbsp rice flour
  • 1 tbsp arrowroot starch
  • 1/4 tsp vanilla powder
  • 2 tsp ghee (omit or sub coconut cream for dairy-free)
  • Pinch of salt

  • 1/3 cup cocoa powder
  • 2 1/2 tbsp milk powder
