10 Gluten-Free Lunch Ideas On the Go

These gluten-free lunches are the perfect option for school or work lunches on the go! Everything from chili, to sandwiches, and more, these lunches are GF and many are paleo and AIP.
Gluten-Free Lunches on the Go
Lunches on the go can be a challenge when you’re gluten-free, paleo, or AIP. The default of just grabbing a sandwich and calling it a day can be harder, and honestly, just boring! These gluten-free lunch ideas are perfect for mixing it up, adding nutrients, and taking to school or work.
What You’ll Need…
Food storage
- Glass food storage. Glass has always been my personal default to avoid plastic.
- Divided glass containers. This is a great option for when you’re trying to keep food separate.
Reheating Lunches
Not all of these lunches require reheating, but here are some options for those that do…
- Desk crockpot. This was my go-to when I worked in an office! It doesn’t cook food, rather, it reheats at a low temperature as to not overcook it. It’s perfect for soups, but I used to use it to reheat meatballs or chicken with a sauce and vegetables as well.
- Hot logic oven. This is another great option for reheating lunches!

Ingredients
For the GF Pizza Bagel
- 1 gluten-free bagel (I use the Greater Knead)
- 1/2 cup tomato sauce of choice (or nomato sauce)
- 1/4 cup shredded cheese (sub-dairy-free cheese)
- 3–4 mushrooms, sliced
- Cooked ground beef
- 2 tsp parsley, chopped
For the GF Sandwich
- 2 slices paleo or gluten-free bread (I use AWG bakery for paleo bread)
- 1/2 cup arugula
- 2 tsp olive oil
- 2 tsp balsamic vinegar
- 1/4 tsp black pepper
- 3–4 slices Proscuitto
- 1/2 avocado, sliced
Instructions
For the GF Pizza Bagel
- Preheat the oven to 350 F and line a baking sheet with parchment paper.
- Assemble the bagel by topping with sauce, shredded cheese, mushroom, and cooked ground beef.
- Transfer to the preheated oven and cook for 5-8 minutes or until the bagel is soft and the cheese is melted. Serve topped with parsley.
For the GF Sandwich
- Lightly toast the bread using your preferred method.
- Dress the arugula with olive oil, balsamic vinegar, and pepper. Add to the sandwich along with Proscuitto, and avocado. Slice and serve later.
