Mango sticky rice is one of those magical desserts that everyone loves. It’s simple, fresh, and delicious! Though I fully believe that it’s worth the effort to make it from scratch, sometimes it’s easier just to take a shortcut.

This mango sticky rice-inspired chia pudding is the perfect dessert to satisfy your sticky rice cravings! It comes together quickly and comes with the added benefits of being fiber-packed, dairy-free, and refined sugar-free!

The Ingredients for Mango Sticky Rice Chia Pudding

  • Chia Seeds & Coconut Milk. These are the basic ingredients for the chia pudding base. Chia pudding is naturally thick which mimics the texture of sticky rice.
  • Cooked Basmati Rice. Although basmati rice is not typically used for mango sticky rice, typical rice doesn’t work as well within the actual chia pudding as it clumps up, so cooked basmati rice still allows for the rice texture and extra starchiness in the recipe.
  • Fresh Mango.
  • Shredded Coconut. 

How to make Mango Sticky Rice Chia Pudding

  • Prep the chia pudding and set in the fridge.
  • Add the rice. Add the basmati rice to the prepared chia pudding and stir to break up the rice into the chia pudding.

  • Assemble and serve. Divide the chia pudding between two small dessert cups and top with diced mango and shredded coconut.

Tips & Tricks

  • Add more sweetener to taste. I think that the mango itself is plenty sweet for this recipe, but you can for sure add extra honey to taste if you like an even sweeter chia pudding.
  • Make it even more decadent with a coconut sauce on top. I decided to keep this recipe really simple, but you can add a sauce like in this recipe here! 

Can you make this recipe coconut-free?

Coconut is a core flavor for mango sticky rice, so I would personally wouldn’t swap it out.

How long does this recipe stay fresh in the fridge?

You can easily keep this in the fridge for 3 days or so! I would store the components separately and combine and serve them when ready to enjoy.

Ingredients

  • 1/4 cup chia seeds
  • 1 tbsp honey
  • 1/3 cup basmati rice, cooked and cooled
  • 1/2 mango, diced
  • 2 tbsp shredded coconut

  1. Combine the coconut milk, chia seeds, and honey in a bowl and whisk well to combine. Cover and transfer to the fridge, allowing it to set for several hours or overnight or until thickened.
  2. Add the basmati rice to the prepared chia pudding and stir to break up the rice into the chia pudding.
  3. Divide the chia pudding between two small dessert cups and top with diced mango and shredded coconut. Serve fresh, mixing to stir in the mango.
