Air Fryer Butternut Squash

It’s squash season! If you find yourself walking by the mountain of different winter squashes at the grocery store every year and not really knowing what to do with them to make them exciting, I feel you. I used to feel the exact same way. I was intimidated to cut them and had no idea how to make them taste good. Luckily, there are so many ways to cook squash, and this is one of my new favorite methods.

This air fryer butternut squash is a fast, easy, and delicious way to cook winter squash. Serve it as a side for any fall meal for some extra veggies.

The Ingredients for Air Fryer Butternut Squash

  • Butternut squash. The star of the dish! I highly recommend going for butternut squash that has a long neck, as that’s the easiest part to cube.
  • Olive oil. You can also use other oils like coconut or avocado oil. You’ll only need a bit!
  • Cinnamon, thyme leaves, salt, and black pepper. To season the squash! You can omit the pepper for AIP.

How to make Air Fryer Butternut Squash

  • Prepare the butternut squash. Toss the butternut squash with oil, and seasonings until coated.
  • Air fry the butternut squash. Preheat the air fryer to 400 F. Cook for 10 minutes, remove the basket and toss to rotate the butternut squash. Cook for another 10 minutes, or until lightly crisp and soft.
  • Serve fresh!

How do you cut butternut squash?

  1. Wash the squash well. Lay it flat on a cutting board and carefully cut off the ends at the top and bottom of the squash.
  2. Use a peeler to peel off the thick skin.
  3. Chop the squash at the base on the neck. Slice the more circular half of the squash, and scoop out the seeds.
  4. Slice the rest of the squash into cubes.

Can you use frozen butternut squash?

It’s definitely best to use fresh butternut squash as frozen can have excess liquid. Using fresh squash will help to keep it nice and crispy!

What can you serve with this butternut squash?

This butternut squash is the perfect side for fall dishes like pot roast, roasted chicken, etc.

Can you make butternut squash without an airfryer?

Butternut squash is also great roasted, this is just a different method!

  • 2 tsp olive oil
  • 1 tsp cinnamon

  • 3/4 tsp salt
  • 1/4 tsp black pepper (omit for AIP)

Instructions

  1. Toss the butternut squash with oil, and seasonings until coated.
  2. Preheat the air fryer to 400 F and add the butternut squash to the basket. Cook for 10 minutes, remove the basket and toss to rotate the butternut squash. Cook for another 8-10 minutes, or until lightly crisp and soft.
  3. Remove from the air fryer and serve fresh.
