Paleo Ground Beef Quesadillas
These paleo ground beef quesadillas are a grain-free and dairy-free take on a classic. They’re easy to make on a stovetop!
What are Quesadillas?
Quesadillas are a traditional Mexican dish, usually made with 2 corn or flour tortillas, filled with cheese, beans, spiced meats, and traditional Mexican spices! Quesadillas are pretty much their own food group here in Texas, and were one of my favorite dishes to order at Mexican restaurants with my family when I was growing up!
Traditionally, quesadillas are made with corn or flour tortillas, dairy, nightshades, and beans, but this version is gluten-free, grain-free, corn-free, dairy-free, and paleo!

They are made with no grains, corn, flour, dairy or beans, and nightshade-optional, all while tasting just as delicious as traditional Mexican quesadillas!
They are effortless to make
These are perfect to whip up on a busy weeknight or when you just don’t want to spend hours in the kitchen, but want an incredibly delicious and flavorful meal!
How To Make This Paleo Ground Beef Quesadilla
- Cook the beef & veggies: Using a large pan, add the ground beef along with the garlic, onion, and seasonings. Crumble with a wooden spoon and brown thoroughly. Remove from the pan when browned and the onions are cooked. Clean out the pan.
- Cook the quesadilla: If needed, quickly microwave (or heat in a pan) the tortillas to soften them and make them easier to fold without breaking. Heat the avocado oil in a pan and add the softened tortilla. Carefully add about 1/3 cup of the cooked beef and about 3 tbsp of queso to one side of the tortilla (amount will vary depending on the size of the tortilla). Use a spatula to fold the tortilla in half. Cook for about 2 minutes on one side to crisp. Carefully flip and cook for another 2-3 minutes or until crisped to your liking. Remove from the pan and transfer to a plate. Continue with the remainder of the tortillas.
- Finish & serve: Once the quesadillas are all cooked, slice each one in half. Top with fresh cilantro and green onion and serve with salsa and guacamole on the side.

You can use Siete foods, or use this for a nut-free and dairy-free queso option!
Garlic, Onion, Lime, Dried Cilantro, Oregano, Chili Powder, Sea Salt & Black Pepper
These fully round out the delicious flavor of these quesadillas! You can omit the chili powder & black pepper for AIP.

Can you use other meat fillings?
Yes! My husband loves shredded chicken in quesadillas and you can totally do that instead if you prefer.
Can you use a different tortilla to make it AIP?
The Siete food’s almond flour tortillas really work great for this, but you can also try to do it with Cassava flour tortillas. If you want a storebought AIP option, you can try to use their burrito sized tortillas which are AIP!

Ingredients
- 1 lb ground beef
- 2 cloves garlic, minced
- 1/2 onion, diced
- 2 tsp dried cilantro
- 2 tsp dried oregano
- 1 tsp chili powder (omit for nightshade free)
- 1/2 tsp sea salt
- 1/4 tsp black pepper
- Juice of half a lime
- 2 tbsp avocado oil
- 4 Siete Foods Almond Flour Tortilla’s (sub other grain free tortillas)
- 1/2 cup + 3 tbsp dairy free queso (use Siete foods, or use this for a nut-free and dairy-free queso option)
To garnish:
- 2 tbsp fresh cilantro, chopped
- 2 tbsp green onion, chopped
To serve:
- Salsa of your choice
- Guacamole of your choice
