What are Quesadillas?

Quesadillas are a traditional Mexican dish, usually made with 2 corn or flour tortillas, filled with cheese, beans, spiced meats, and traditional Mexican spices! Quesadillas are pretty much their own food group here in Texas, and were one of my favorite dishes to order at Mexican restaurants with my family when I was growing up!

Traditionally, quesadillas are made with corn or flour tortillas, dairy, nightshades, and beans, but this version is gluten-free, grain-free, corn-free, dairy-free, and paleo!

Why is this Paleo Ground Beef Quesadilla amazing?

They are made with healthy ingredients

They are made with no grains, corn, flour, dairy or beans, and nightshade-optional, all while tasting just as delicious as traditional Mexican quesadillas!

They are effortless to make

These are perfect to whip up on a busy weeknight or when you just don’t want to spend hours in the kitchen, but want an incredibly delicious and flavorful meal!

How To Make This Paleo Ground Beef Quesadilla

  • Cook the beef & veggies: Using a large pan, add the ground beef along with the garlic, onion, and seasonings. Crumble with a wooden spoon and brown thoroughly. Remove from the pan when browned and the onions are cooked. Clean out the pan.
  • Cook the quesadilla: If needed, quickly microwave (or heat in a pan) the tortillas to soften them and make them easier to fold without breaking. Heat the avocado oil in a pan and add the softened tortilla. Carefully add about 1/3 cup of the cooked beef and about 3 tbsp of queso to one side of the tortilla (amount will vary depending on the size of the tortilla). Use a spatula to fold the tortilla in half. Cook for about 2 minutes on one side to crisp. Carefully flip and cook for another 2-3 minutes or until crisped to your liking. Remove from the pan and transfer to a plate. Continue with the remainder of the tortillas.
  • Finish & serve: Once the quesadillas are all cooked, slice each one in half. Top with fresh cilantro and green onion and serve with salsa and guacamole on the side.
